Rick Gallop's approach to the GI way of eating is very easy to follow - by categorizing the foods into the three traffic light approach:

Green foods - Go and eat as much as you like.
Yellow foods - Caution, eat in moderation
Red foods - Stop and avoid eating

***GREEN LIGHT SNACKS***
Almonds (limit serving size)
Applesauce (unsweetened)
Canned peaches/pears in juice
Cottage cheese (1% or fat free)
Extra low-fat cheese (e.g. Laughing Cow Light, Boursin Light)
Flavored yogurt (fat free with sweetener)
Fresh fruit (most see fruit list)
Fresh veggies (see the veggie list)
Frozen yogurt (1/2 cup; low fat)
Hazelnuts (limit serving size)
High protein bars (12 to 15 grams protein per 50 to 60 gram bar e.g., Balance bar)
Ice cream (lowfat and no added sugar) limit serving size
Macadamia nuts (limit serving size)
Pickles
Seeds (most; e.g. flax, pumpkin, sesame, sunflower)
Soy nuts
Sugar free hard candies

***YELLOW LIGHTS SNACK***
Bananas
Dark chocolate (70% cocoa)
Ice cream (low-fat)
Nuts, except those listed as green-light
Popcorn (microwave light)

***RED LIGHT SNACKS***
Bagels
Candy
Cookies
Doughnuts
French fries
Granola bars (commercial)
Ice cream (regular)
Jell-O
Melba toast
