Sounds soooo yummy! I was trying to figure out a way to make whole30 friendly paella. Bet this will take care of the Spanish rice conundrum.

"Rice" a head of cauliflower in your food processor. Just pulse it until the cauliflower is finely ground like rice. Divide it in half and store half in the fridge or freezer. Put the other half in a medium sauce pan, and drizzle with some spices and olive oil cook on a low heat.

In a separate sauce pan, cut up two chicken breasts and simmer in a bit of olive oil.

Open a small can of tomato paste (double check label and make sure that there are no additives to your canned paste). Dump the tomato past in with the cauliflower mix. Once your chicken is done, toss it in with the rice and serve.

My children even loved this. It's a great healthy meal!
