This has got to me my new favorite recipe! I ate it twice last week and I think twice the week before! I usually make a huge an of roasted broccoli and just eat the chicken right on top of the Broccoli so it can soak up the Dijony Goodness!

Ingredients:
1.5 Pounds Boneless Skinless Chicken Thighs, fat trimmed, chunked
8 Ounces Mushrooms sliced
1 Medium Onion sliced thin
Garlic
2 Strips Bacon cut into bits
1/8 to 1/4 cup Dijon Mustard
1/4 to 1/3 cup Canned Coconut Milk or Cream

Start with frying the bacon in a well seasoned Cast Iron Pan, or nonstick whatever floats your boat, until crisp and removed from pan.
Sautee onion in bacon fat until it becomes translucent
Add Garlic and Chicken Chunks
Cook for about 5 - 7 minutes and then add mushrooms and continue to cook until mushrooms are tender and chicken it nearly done.
Add Dijon Mustard and Coconut Milk/Cream
Continue to simmer until Chicken is completely cooked through.

Serve over Roasted Broccoli with topped with Bacon! Nom it out!
