You can also make a big egg and hash brown casserole. Just mix together about 7 eggs and a package of organic hash browns...add a dash of almond milk. Bake about 25 minutes at 350. I also have added bacon bits on top- you could probably add sausage as well.

If you make it ahead you would have a few days breakfast ahead of time.

Great idea Ericka! Thanks for sharing! Scotch eggs sound yummy. I had forgotten that someone else mentioned making their own sausage.

I made Scotch eggs for a portable breakfast (or I usually have it for lunch since that's when I need portable). It's just hard boiled eggs wrapped in breakfast sausage and baked in the oven for 15-20 minutes. I made my own turkey sausage using ground turkey and spices since it's hard to find one without sugar and I find the pork has too much fat for me. Then I have some sort of veggie or sweet potato with it.

I did not make the muffins as the book has not yet reappeared! Thank you for reminding me. I will get on my stepdaughter's case tonight!

I have been eating breakfast egg frittattas everyday so far. I fry up some veggies (lots) and put them in muffin pan. About 1/2 way or so. Then I mix 1/2 egg and 1/2 egg whites and fill them up. Bake them and they are good to go all week!

I would love to hear about the apple ones though. Please let us know how they turn out!

Egg muffins. Not Egg _McMuffins_... egg muffins... Just saw the concept in a book called 21 Day Sugar Detox... I have broccoli to use up. I am going to try making the recipe for Broccoli Egg Muffins tonight... there is also one made with apples and cinnamon, no sugar or sweetner, but it does have vanilla extract which could be omitted... Is that too close to SWYPO? I will post how they taste tomorrow as they are supposedly easily reheatable. Yay!
