I've been doing a lot with cauliflower rice dishes lately. Last week made a fried rice recipe with cauliflower rice. Last night made Slow Cooker Salsa chicken and had it over cauliflower rice. Even my husband has been liking the cauliflower rice.

It's my birthday and we are having salmon caught by a co-worker from Alaska, grilled veggies, brown rice w/ quinoa, cabbage salad & a big-chunk chocolate chip cookie (instead of my favorite, double-fudge chocolate cake--which I don't "need" & is big enough to slice & serve over the coming year!)

Tonight was homemade soup... a remake of some of last weekend's leftover's! Turned out well & will do again.

Tonight a container of soup from the freezer. Been eating a lot of frozen dinners, either commercial or what I make a freeze. Everything is single serve sizes so portion control built in.

Roast pork tonight. I did plan on buying chicken but when I saw the price, I slowly backed away until I could find affordable food. Cheapest tray (large pack with 10 breasts........$38)

I am not a big fan of chicken breast so I'm always on the hunt for recipes that will be moist and tasty. Just looking at the White Chicken Chili recipe here on spark. I think I found supper for tonight.

Tonight I made the South Beach Shepherd's Pie. It was really good. It has the cauliflower mashed "potatoes"and they turned out really good. I used my food processor which made them creamy. You couldn't tell that they weren't potatoes.

Mmmmm. You're giving me some ideas. I get Diabetic Living publications for recipe ideas and just got their new slow cooker book. I usually try to adapt recipes to the cycle I'm following.

Right now, I'm using up some Lean Cuisine Salad additions I have in the freezer as I gear up for soups and Fall cooking.

Found a recipe for Parmesan encrusted Tilapia on Pinterest by searching 17 day diet phase 1 - that will be dinner tomorrow. I won't be home for dinner tonight and didn't plan for that so I guess tonight will be a take out salad with chicken from a local joint.

PS there are a few marvelous looking dishes that I ran across in the search above - even something that I used to do - unstuffed cabbage casserole (with riced cauliflower instead of rice and ground turkey instead of beef - so I have some inspirations for the coming week - just need to make sure any needed ingredients make the shopping list.

Breakfast - a Slice of the Turkey Sausage, Mushroom, Onion, Tomato Frittata that I made last weekend
Lunch - Large Salad w Turkey, Avocado, Tomato, Cucumber, Shredded Carrots and a few sliced Almonds w Balsalmic Vinegrette
Dinner -Corned Beef Hash (w Sweet Potatoes instead of white potatoes) - we had corned beef for St Patricks day and have leftovers.

gained a lb (according to SP, but according to my calculations it was a 1/2 lb, but anyway!!!)

Breakfast was a banana, cream of wheat and milk (2% 1/2 serving)
Lunch was salad with beans, blueberries, tomatoes, fig balsamic and little bit of olive oil
Dinner is chicken caesar salad. My husband makes the caesar dressing and I calculated the servings. Within my range of carbs, fats, and proteins. Love that I learned (thanks to Cindi) how to calculate my "recipes"

thanks Cindi, appreciate your help. I made blueberry muffins. Made them as "mini's" The recipe was for 12 and I made 24.

Unfortunately, they were REALLY good! Needless to say, yesterday I was having an off day, and ate 6. Yes, they are minis, but they also calculated at 100 calories each so I ate 600 calories of sugar filled items. Today, I am back on track, and not touching one. I got my sugar rush for the month.

Will I make these again? Most definitely. Next time I will have more control. Blueberry muffins are one of my favorite things in the world and I made them, from scratch, fresh blueberries, the whole nine yards. I think I just was having a bad day and I let my guard down.

It was really helpful to have the option to figure out servings/calories because if I didn't I would have probably eaten 4 more because they were minis!

Go to Sparkrecipes under Articles and Videos. Then click Add/Calculate a recipe. You have to put in the foods just like you put foods into your tracker. Then you can create the recipe to submit to Sparkrecipes or just have it for your list.

Cindi - how do you plug in a recipe? I made blueberry muffins and did them as mini's but have no idea the calories, etc. I know there is a way you can put in your own recipe, just can't figure it out.

Good morning! Breakfast was a whole wheat English muffin and poached egg. Lunch will be leftover whole wheat spaghetti with tomato, beans, broccoli rabe and dinner will be leftover meatloaf with string beans, potatoes, and tomatoes.

Thanks. Other than dealing with the cold weather, this Winter hasn't been too bad. My son is over his cold and I'm still my usual healthy self. (Knock on wood.)

Today is a work day.
Breakfast was two eggs scrambled and grapes
Lunch was chili.
Dinner was hamburger soup.

Monday through Thursday its what is in the freezer.

hoping you and your son are feeling better Cindi.

This morning had cottage cheese and a peach cup (dole w/100% juice). Lunch was a slice of whole grain bread, honey ham and spinach. Snack will be a banana, milk and yogurt. Dinner is chicken, tortellini and escarole soup.

Still having a hard time getting my potassium level up to where they say it should be and also struggling with calcium.

Breakfast was a Thomas Thin Cinnamon Raisin Bagel (110 calories), 3 slices of pre-cooked bacon (only 80 calories) and a clementine.

Lunch will be tuna on a Thomas Thin Whole Wheat Bagel

Dinner- hmmm, not sure yet. It's early in the day so I've got to think about this!

Eliminate excuses and avoid procrastination! Just Do It!

I'm finally getting back on track and getting my appetite back after a horrible bout with the flu!

Breakfast was cottage cheese and pears (which I didn't have until noon so maybe it's really lunch)

Dinner will be whole grain spaghetti with white beans, tomatoes, garlic, spinach and a little chicken broth.

I think the cold is taking away my motivation to cook or be creative. Son is coming down with a cold. Made chicken soup for lunch today with a can of chicken noodle soup, some of my homemade broth from the freezer and assorted vegetables cut up.

Supper may just be husband and me since son has a date planned. So Brussels sprouts and chicken.

been a bad week, husband came down with the flu Monday night, then I got it Wednesday night. All that's been on the menu is broth and toast. No real desire to eat. Yesterday he felt better and picked up a container of wonton soup. Had that and was the first thing that tasted halfway decent.

Hoping to be completely back on track next week.

Lunch was lentil soup.
Supper was almost forgotten again. After I came back from running I realized that I hadn't had supper. The only quick and easy food was either Lentil soup or a heat and eat chicken burrito. I chose the burrito, even though I try to keep my carbs earlier in the day. And I think the chicken must have been pureed. I didn't see any chicken, but it was good and filling.

Nwesch24: I hope you can get out soon. I know what you mean about payday and groceries.

have nothing left in the house, had bread and pb for breakfast, tuna and spinach for lunch and eating bean, bacon and cabbage soup for dinner. Can't wait for Friday when we get paid and can get out of the house and grocery shop! Been a horrible week weather wise.

today is a tough one. We are getting snow. Lots of it and heavy, wet snow. I did not get out to the store, so working on what I have in. Not doing a great balancing act between carbs, proteins and fats, but still within my range. Breakfast was easy as I always have PB in and normally have banana. I also happened to have some whole wheat crackers so was good there. Lunch I ate leftover chili, small portion, enough to fill me, but not enough that I'm kicking myself. Tonight I defrosted some bratwursts (ok, not the best thing, but, it's what I had). Having it with red cabbage and no yolk noodles.

Tomorrow I'll get out to the store and get better food in, but considering what I had to work with, I'm pretty happy!

There is more activity on the What is weather like thread. It seems like people always like to talk about weather. Right now I feel like the weather is the same everyday, cold. And I don't like it. There is also a fitness goal thread that is being rather active. I like talking about food, so here I am. Actually, I make the rounds as things pop up in my email.

Tonight we had a cross between sir-fry and fried rice without the rice. The idea is to use things up. I feel like it's an endless battle to keep using things up right now. Tomorrow I'm thinking the leftovers from tonight is going into a fried rice with actual rice.
Lunch was tomato soup and my husband had grilled cheese.

lol, Cindi, that Taco sounds good!!!! I'm feeling like it's just you and me here on this thread! But I do enjoy posting and reading your daily plans.

Tonight we having leftovers - a bean and kale soup. I've once again worked backwards and actually get to each more than I thought I would for the day! That's a good thing. Tomorrow, well, I'll let you know :) My husband is making chili and corn bread so I might be just getting one meal!!!!

Tonight made a lentil soup with some broth I had in the freezer from a turkey a few months ago. It was really good!
Last night I got a taco at Taco John's drive thru. What can I say? I was hungry and still had my 40 minute drive home.

I've been working backwards the last few days. Dinners are difficult as my husband likes a "meal". He has been very good about working with me. Tonight, since we ate a lot of beef, pork, and chicken the last two weeks, I'm making pasta. Kind of a primavera. Rather than sautéing my veggies in oil, I sprayed a pan with Pam and roasted them. Rather than use a lot of olive oil, I reduced a low fat, low sodium chicken broth with garlic.IIt thickened it a tiny bit, made it a little hardier. My husband can add oil as he wants. I used carrots, mushrooms, and grape tomatoes, will add some peas and scallions. Using angel hair pasta (regular, as I couldn't find the whole grain/wheat at my little market). I going to add some shrimp to provide protein.

Having a bit of fun figuring out healthy meals that will also satisfy my husband!

Tonight my husband is making chicken catatorie so my day is a little screwy. I plugged in everything I'll eat at dinner, then worked backwards to balance my day. Breakfast will be a banana, peanut butter and milk. Lunch will be spinach with strawberries and walnuts and some balsamic vinegar. I love weekends when my husband cooks, but it's been hard the last couple of weeks planning a balanced day.

Breakfast was oatmeal and a banana. Lunch will be spinach, strawberries, walnuts, beans, dressed with fig balsamic and olive oil. The rest of the day I have no idea! Fridays are really tough because my husband and I don't have dinner. He relaxes with a platter of cheese and dried sausage and his martini! I usually pick on the platter, but I have to figure something else out.
