Tonight was a single serve container of some of my soup that I froze. That is a favorite of my husband and I for quick meals. I freeze food in single servings and we defrost what we need to make a meal. The other night my husband defrosted two containers to make soup for the two of us.

One of my quick "go to" dinners is an egg white (fresh) omelet with asparagus, spinach, grated parmesan cheese and a pinch or two of shredded cheddar melted on top. Delicious, quick to make, low calorie, high protein and nutritious.

I found some great ideas for lunches to take to work. Actually there was some soup and while I try to save soup for cooler months it looked pretty good.

My lazy meal is a frozen diet dinner. Okay once in a while or at work, but not a steady diet every night at home when I can cook.

I find it so easy to skip a meal when I'm the only one in the house. Or, my lazy dinner...peanut butter and honey bread. I'm working hard to find recipes where I'm not inundated with leftovers that go bad.

Thanks for posting. My younger son has been at college until yesterday when he came home for the next month. I had such grand ideas when he left for college and did pretty well until sometime last fall or winter. I think I lose interest or get bored. I think also I get stressed and lose interest. Now, I have to think about meals again.

This is a good idea and I'm surprised that no one is posting. Even though my young adult sons are still living at home, they more often than not, are not home for dinner. Left overs have gone to waste. So now, I'm cooking for me unless they're in the house. I like to make enough for 2 so I have leftovers to take to work.
