Will do my exercise when I get home from church

my mom made this salad a lot for Thanksgiving


Cranberry Salad

Servings: 9
Ingredients:
2 (12 ounce) packages fresh cranberries
1 cup white sugar (start with 1/2 cup taste if to sour add more - little at a time)
1 (20 ounce) can crushed pineapple, drained
1 cup chopped pecans
1 pint heavy whipping cream
7 ounces miniature marshmallows
Directions:
1. Coarsely chop the cranberries in a food processor; put in a large, non-metal bowl and mix in the sugar. Cover and refrigerate for 12 hours.
2. Whip the cream until stiff. Add the pineapple and nuts to the cranberries, mix well. Fold in whipped cream and marshmallows; refrigerate until ready to serve.


Acorn squash

I love them I bake them with a little butter and brown sugar and cinnamon - oh so good


Mushrooms

I put them in just about everything right now from Salads to my Mixed Vegs and i can eat them raw too with a little Ranch Dressing

Looks like this weeks challenge is no good only a few of doing that is ok you guys keep up the good work

Exercise today arms and crunches

Potatoes Sweet or Red or White

I love them baked with a little butter and salt
I have a lot of recipes for both but just liked them Baked is still my favorite

Finally a food I have and can use - cucumbers. I just cut them up and add them to my spring greens salad, along with raisins, grapes, feta cheese and I top them with Walden Farms dressing (any) which is zero calories - does it get any better than that???

Did the exercises last night and walked about 3 miles, so did OK yesterday and got my food in for today. Usually do the exercises at night. Going to spend the day in Glendale, thinking of buying new tennis shoes while I have a 15% off coupon.

Eve I am not eating the fruit but have a lot of recipes I can use them in and when I can add fruit again will make some of the recipes again

Doing all my exercises

Pear Bread
Servings: 20

Ingredients:
3 cups all-purpose flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
3/4 cup vegetable oil
3 eggs
2 cups white sugar
2 cups peeled shredded pears
1 cup chopped pecans
2 teaspoons vanilla extract

Directions:
1. In a large mixing bowl combine flour, baking powder, baking soda, salt, and cinnamon. Make a well in the center of the bowl.
2. In a separate bowl combine the oil, eggs, sugar, grated pears, pecans, and vanilla. Blend well. Add to well of dry ingredients. Stir until just moistened. Spoon batter into 2 greased and floured 8x5x3 inch loaf pans.
3. Bake in a preheated 325 degree F (165 degrees C) oven for one hour and 15 minutes. Cool on wire rack before removing from the loaf pans.

Cucumbers

Right now I have had a lot of them
I cut them up into my Chicken and add Celery and Light Miracle Whip sometimes add mushrooms then I have a Chicken Salad - oh so good

Instead of the video, I am doing 100 crunches everyday this week. I will try to do the video some more this weekend though.

Also,I had the Cauliflower Steamed with Butter.

Did the exercise portion of the challenge for today! Plus I did my morning walk.

Do not have zucchini or plums so will not do the food portion for today!

doing my arms and crunches

Zucchini Lasagna

10 oz cooked ground beef
1 cup canned Italian diced tomatoes
1/4 tsp garlic powder
1/8 tsp salt
1/8 tsp pepper
1 med (2oz) Zucchini peeled and sliced very thin
2 oz sliced mushrooms

Cheese Filling:
4 oz or 1/2 cup Part skim Ricotta cheese
6oz or 1 1/2 cups 2% mozzarella cheese
Divided in half (3/4 cup)
3 Tbsp Parmesan cheese
2 Tbsp egg beaters
1/4 tsp garlic powder
1 tsp Italian seasoning
1/8 tsp pepper

Directions
Preheat over to 350*
Add tomatoes , garlic powder, salt, pepper, mushrooms to cooked beef and simmer for 2 mins stirring constantly. Remove from heat
Mix the ingredients for cheese filling but don't forget to safe 3/4 cup of Mozz cheese for the top
Fill 1/2 meat mixture then put Zucchini on top of meat then cheese mixture then the rest of the meat mixture then put the 3/4cup Mozz cheese on top
Bake for 40 min until the top because bubbly and browned - the take out of oven and let it sit for 10 min to firm up then cut into 4 equal portions - enjoy


Seen this recipe when I can have fruit again going to try this if someone does try let me know how it turned out

Plums

Savory Stuffed Chicken Breast with Plum Glaze

1 tablespoon olive oil
2 (6 ounce) skinless, boneless chicken breast halves
Salt and pepper to taste
2 pieces cornbread, crumbled
2 slices cooked bacon, crumbled
2 tablespoons minced celery
2 tablespoons minced onion
2 tablespoons butter, melted
1/4 cup chicken stock
1/3 cup chicken stock
1/3 cup plum jam

PREP 15 mins COOK 40 mins READY IN 55 mins

Directions

Preheat oven to 350 degrees F (175 degrees C).
Heat olive oil in a skillet over high heat. Using a paring knife, cut a pocket into the side of each breast. Place into skillet and sear until lightly browned on both sides, but not cooked through. Set aside.
Combine cornbread, bacon, celery, onion, butter, and 1/4 cup chicken stock; mix until well combined. Stuff each breast with cornbread mixture.
Bake in preheated oven for 25 minutes.
While the chicken is baking, bring 1/3 cup chicken stock to a simmer. Whisk in plum jam, and simmer over medium-low heat until most of the chicken stock has evaporated.
Pour plum glaze over chicken breasts, and cook for an additional 10 minutes and the center of the stuffed breast reaches 160 degrees F (70 degrees C).

Well, the food for Wednesday is cauliflower, so all you have to do is tell us how you used it, such as a recipe, or even if you ate it raw.

It's hard for me too because I'm 30 miles from a store, and right now I'm without a car, so some days you can substitute for another day, and then catch it later. Of course most of can not do every single day. Just do the best you can.

Also, Wednesday is the day we send either notes or goodies to each of the people in the Challenge. We'll include you in this if you like.

I'm eating low carb right now. Just meat and veg and I haven't done my grocery shopping yet for October. So the timing isn't right for the food challenge. I already have my meals for this week. I have Cabbage, Cauliflower, Egg, Romaine and Ground Turkey.

9/23 Did the exercise challenge. Wow! It was a bit tough! StrengthTraining is where I punk out so this will be good for me.

Last night I did another arm and leg exercise using the thing you pull on and it stretches -- my mind went blank and I can't remember the name of it. So I got lots of arm exercises Monday.

Went for a morning walk even though I didn't go to sleep until 2:00 a.m. Will do the arm stuff this afternoon.

Today I made Waldorf Salad and I used apple, celery, raisins, nuts. For the dressing I like to use the Light Mayo and also FF Sour Cream and I always add cinnamon, nutmeg or which one you like best. I think using part sour cream it cuts down on calories and gives it a little more zip. I'll put in the recipe if anyone wants it.

Do you have the nutritional values on any of your recipes, Vicki?

Eve I love baked apples can't wait to get one soon - glad you can do the arm thing now if you want I need to I have bad bat wings for I have not gotten to swim much the last two years that really helps with bat wing arms so I have to do this exercise and we will see how it goes afterward

Ok my bat wing exercise and today's recipes

Butter Nut Squash

Soft and Chewy Harvest Cookie Recipe:
Yields: 8 dozen
Prep time: 15 min
Cook time: 15 minutes

Ingredients:
1/2 cup butter, softened
1 cup granulated sugar
1/2 cup firmly-packed brown sugar
1/4 cup dark molasses
2 cups yellow squash puree*
2 large eggs
1 teaspoon salt
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
2 cups rolled oats (either old-fashioned or quick-cooking)
1 cup sweetened flaked coconut
1 cup raisins
1/2 cup chopped nuts of your choice (optional)

* To Make Butternut Squash Puree: Cut butternut squash in half lengthwise and remove seeds. Place squash, cut side down, in a shallow pan on aluminum foil or Silpat-lined baking sheet. Bake at 350 degrees F. until squash is soft, approximately 45 to 60 minutes (depending on the size of your squash). Remove from oven and let cool. When cool, scoop out the cooked flesh/pulp (discarding the shell), place the pulp in a food processor and process until smooth. Measure out the amount you need for this recipe, and reserve any remaining pulp (either in the refrigerator or freeze) for other uses. NOTE: This Butternut Squash Puree may be substituted in any recipe that calls for pumpkin puree.

* You may also substitute pumpkin for the squash.

Preparation:

Preheat oven to 350 degrees F.

In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add molasses, squash, and eggs; blend well. Stir in salt, cinnamon, nutmeg, allspice, and cloves until well blended. Note: If you love pumpkin pie taste, you may add more of the spices.

Sift together the flour, baking soda, and baking powder. Add the flour mixture and rolled oats, alternating between flour and oats until evenly combined into the dough. Note: Depending on the wetness of the squash, you may need to add more oats so that the dough forms a nice mound on your spoon.

Mix in the coconut, raisins, and nuts (if adding).

Scoop dough in well-rounded teaspoons and slide off with a rubber spatula onto your ungreased cookie sheet, approximately 3 inches apart. Baked approximately 15 minutes until the bottoms of the cookies are a light brown. Cookies should bounce back when you press in the center with your finger (just like a cake). These cookies are soft and chewy and will not crumble when you bite into them (they are almost like a mini-cake. Note: If they don't bounce back, then the centers are doughy and under-cooked. You will need to bake them longer.

Remove from oven and immediately remove from cookie sheet.

Makes about 8 dozen cookies.
I put them in a 12x19 in pan baked for 20 - 30 min and cut into 96 pieces about 1in x 1 in they are so good and they freeze very well



Celery

you can put in almost any recipe but I like them with Peanut Butter and Raisins we call them Ants on a log

I found two weights that you attach to your wrist, so until I get to Glendale again, I will do some arm exercises using those. Every little bit helps, although my arms aren't too bad.

For the apple, decided to bake one with brown sugar and drizzled some SF syrup over it. Also a few ground up nuts layered in with the brown sugar (in the core that was hollowed out). You can either bake or microwave.

I copied your recipe for the broccoli, Vicki -- sounds wonderful. The apple thing didn't appeal to me because I like my apples cut up quite small -it's why I never buy a ready-made apple pie

Going to do my Bat wing exercise and make something with Broccoli and I have a good but not so low in cal recipe for Apples will report later

emoticon Apple Pie Roll Ups
1/2 c. sugar ( you could sub sugar for splenda sugar)
1 tsp. cinnamon
1/4 tsp. nutmeg
1 pkg. (14.1 oz..} refrigerated pie crust (but only use one roll of dough)
1 - 2 tbsp. melted butter, divided (sub butter for light marg)
1 very large peeled apple, cut into 12 wedges (Granny Smiths are best but any apple will do)

mix sugar and cinn and nutmeg in bowl
roll out pie crust
spread out 1 1/2 tbsp butter on crust then sprinkle the sugar mixture over the top (you may not use it all just enough to cover the pie crust)
then cut like a crust like a pizza slices cut into 12 slices then peel your apple and cut into 12 slices and roll up one slice in pie crust cuts and roll to look like a crescent rolls put on greased pan
spread a little more butter on the top of each roll up and sprinkle with a little more sugar the put in oven at 425* for 12 - 15 min so they look a little brown on top and apple is done

This sounds so good going to make for Dinner tonight

emoticon Roasted Broccoli

Prep time: 5 mins
Cook time: 30 mins
Total time: 35 mins
Serves: 4

Ingredients

Head of broccoli
2-3 cloves of garlic (or tsp powdered garlic)
Ziploc Bag
2 TBSP Olive Oil
Salt and Pepper - to taste
Sometimes I add onion powder too - tsp

Instructions

Preheat oven to 375
Chop a head of broccoli (do not rinse) - or rinse and let thoroughly dry
Mince 2-3 cloves of fresh garlic or you can use 1 tsp powdered garlic
Place broccoli into a gallon size ziploc bag.
Add garlic with 2 TBSP olive oil and salt and pepper to taste.
Shake your ziploc bag well until coated
Spread out on baking sheet
Place on top rack and bake for about 30 minutes.
The Broccoli will start to brown up and get crunchy and that is when you are ready to pull it out of the oven.
It tastes AMAZING! You may need to double this it is that good!

I can't watch video's in Yarnell, and my weights are still in Glendale -- so I am skipping the exercise challenge for Week 4.

Definitely will partake in the food portion.
