Good evening,

For dinner tonight one of my son's came over and grilled hamburgers and chicken for me for Mothers Day. It was nice to be waited on and he even cleaned everything up.

That sounds great. I'll look it up. I love making bean soups, and white beans are one of my favorites. My husband wants spinach every day. Thanks for the suggestion.

I made a recipe called White Beans, Spinach, and Tomatoes over Linguine. Its a Spark recipe and could easily be Vegetarian. Delicious. But the next time I make it I'll be adding Italian sausage. Not a vegetarian. I missed the meat. But it was still delicious.

I am making one of my favorites - roasted chicken and veggies - Roast in a 350 degree oven for about 1 1/2 hours until chicken has an internal temp of 165 degrees. I roast a whole chicken over a bed of cut up onions, both rubbed lightly with olive oil and drizzled with lemon juice. You can add other veggies to the pan, or put them on a cookie sheet to roast at the same time. I love to choose from a combination of chopped sweet potatoes, broccoli, asparagus, or carrots.

Another option after cooking is to add a cup of white wine to the onions and scrape up all the bits on the bottom of the pan.

After removing the chicken from the carcass, I throw the carcass in a large pot, covered with water, and add onion, celery tops, and various herbs. Bring to a boil and cook for 2 hours. Strain the broth. I will put this in the fridge overnight so I can skim off the fat the next day. Add your choice of veggies, potatoes or pasta if desired, and chicken if desired to make a tasty soup.
