Apple Pie in a Jar ( canning recipe to store up for those special times and events)

4 1/2 cups sugar (regular sugar, I use splenda on the second batch)
1cup corn starch
2 tsp. cinnamon
1/4 tsp nutmeg
3 tablespoons lemon juice
7 quarts of apples (tart-I use Granny Smith)

Combine the first 4 ingredients and add 1 tsp salt and 10 cups of water. Cook until thick and bubbles, add lemon juice. Pour the hot syrup over the apples packed in hot jars leaving 1' head space. Seal and cook in water bath (put in boiling water and cover the entire jars) For quart jars boil for 25 minutes or 20 minutes for pint jars.

Mock egg salad
Cooked garbanzo beans (chick peas)
Green onion
Mayo
Salt and pepper to taste
Pickle or relish optional
Puree all ingredients in food processor until desired consistency. Use like egg salad on bread lettuce leaves, stuff tomatoes or avocado. Its very good!

COCONUT CAKE
15 PIECES

Yellow cake mix
12 oz diet 7-up (yes soda does work!)
1 tsp coconut extract

Mix together and bake according to cake box instructions

Icing

container marshmallow cream (6-7 oz)
1 tsp coconut extract
1 8 oz tub FF cool whip
Sprinkle coconut on top (no more than cup)

LEMON MUFFINS

12 muffins

1 box lemon cake mix
1 C applesauce
C water
1 Tbs poppy seeds (optional)

Mix cake mix applesauce and water. If using poppy seeds, place in bottom of muffin tin, then pour mixture over them.

Bake at 350 degrees for 20 min.

Low Cholesterol Baked Potatos

4 cups thinly sliced raw potatoes
1 onion
1 tablespoon chopped parsley (optional)
3 tablespoons whole grain flour
1/8 teaspoon pepper
1 1/2 teaspoons salt
3 tablespoons low cholesterol margarine
1 1/2 cups skim milk


Directions
1. Layer potatoes and onions in casserole, sprinkling flour between each layer.



2. Heat milk and margarine and season with salt, pepper, and parsley. Pour sauce over all layers.



3. Bake 1 hour covered at 350 F. Remove cover and bake additional 30 minutes.

FOUR BEAN SALAD

1 can lima beans
1 can black beans
1 can light red kidney beans
1 can chick peas (garbanzo beans)
3 stalks celery, chopped
1 red pepper, chopped
1 jar fat free peppercorn ranch dressing

Mix all together & chill.

French Toast (my grandchildren love it)

Ingredients:
2 eggs
1/4 cup milk
cinnamon
veggie oil
light bread

Beat eggs well, add milk, sprinkle cinnamon and stir. Dip lite or regular bread into mixture and cover both sides. Then sprinkle more cinnamon on both sides. Heat a small amount of oil onto the griddle or skillet, when it is hot, put the dipped bread into it. Brown eat side.
Serve with syrup, jelly or eat by itself.

Pineapple Upside Down Cake


Ingredients:
Box of Yellow Cake Mix
1 Can of sliced pineapples
3/4 cup brown sugar
3/4 cup margarine

Melt the margarine in a cast iron skillet or 11x13 inch cake pan, sprinkle brown sugar over it, put the sliced pineapple over the entire top. Save the pineapple juice for the cake mix .Use all the pineapple juice as part of the amount of water the mix calls for. (Finish up with water)

Follow the directions on the cake mix/ After it is mixed, pour over the mixture over the above.

Bake as the cake box directions says, but it may take additional 10 minutes. Test with a straw or knife to see if it is done.

When finished, turn over in a platter. (I used aluminum foil and cover a thick poster board.

Hawaiian Wedding Cake


1 - Box White or Yellow Cake Mix bake per directions on box in 11 x 14 pan
(You may need to adjust baking time by 5-10 minutes because pan
is larger than 9x13 and cake will not be as thick)

Let Cake Cool

Mix 2 small boxes of instant sugar free Vanilla pudding w/ two cups of cold milk- mix until creamy

Spread on cooled cake

Drain 1 can of DOLE crushed pineapple and spread on top of pudding
(Dole has the best flavor)

Spread on 8 oz container of Fat Free Cool Whip on top of Pineapple

Sprinkle coconut (desired amount) on top of Cool Whip

(sometimes we have to fix those recipes that aren't lowest in calories emoticon
Never Fail Icing
1c sugar
stick butter
cocoa
c milk

Bring to rolling boil for 2 minutes
Take off heat Add 1 Teaspoon Vanilla flavor
, sit in cold water for 5 minutes, beat until thickened

( this is my favorite chili recipe)

2 pounds boneless meat or cooked beans or combo
1 med. Onion diced
3 cloves garlic, crushed
Brown meat with onion and garlic, with oil if meat is lean.

Mix together in a small bowl , 1/2 cup flour, 2 Tbls. Chili powder, 1/4 tsp cumin, paprika for co!or, salt and pepper to taste.

Stir seasonings into meat mixture, cook on low 5 minutes. Add 4 cups diced canned tomatoes,
2 cups beef broth. Simmer for 90 minutes. May need to add water if it gets too thick.

** I like to use my crock pot for this. I like to mix meat and beans keeping the total combined amount at 2 pounds.

Ingredients

12 oz of tuna packed in water ( I used pack in water)
4 hard boiled eggs
3 tbs of light mayonnaise
2 tbs of prepared yellow mustard
Dash of pepper

Salt may be added but there should be enough salt in the canned tuna
(Add celery and red onion for a healthy crunch!)

Directions
Boil 4 eggs. Chop up hard boiled eggs into a mixing bowl. Mix eggs with all other ingredients.

Use on a bed of lettuce or a sandwich.
1 serving = 1/4 cup (enough for a sandwich)

Chicken and Dumplings
2 quarts of water
1.75 lbs of skinless, boneless chicken breasts
1.5 tsp salt substitute
2 stalks of celery, chopped
1 med onion sliced
1 clove garlic, peeled & quartered
1 bay leaf
5 parsley leaves
1 tsp coarsly ground pepper
1 lemon wedge juice

Directions
Bring water to boil in a large pot. Add chicken, 1 tsp of salt sub, onion, celery, garlic, bay leaf & parsley. Reduce to simmer and cook chicken uncovered for 2 hrs. Liquid will reduce by 1/3. Remove chicken and set aside to cool. Strain stock to remove vegies & scum. Reserve 6 cups of pure stock back in pot. Add pepper, .5 tsp of salt sub & juice from lemon wedge. Reheat over med heat until simmering.

Dumplings: combine flour, baking powder, salt sub & milk in medium bowl. Stir until smooth and let dough rise for 5-10 min. Use all dough. Dumplings will swell and then slowly shrink as they partially dissolve into a white gravy. Simmer 20-30 minutes until thick, stirring almost constantly. Tear cooled chicken into large pieces (so it looks like it came from a whole chicken) and drop into pot. Simmer another 5-10 minutes and serve.

Baked Garlic Potatoes

Directions
~Preheat oven to 375*
~Skin, wash and diced potatoes.
~Cut baby carrots in half.
~Spread 2 1/2 Tbsp olive oil on bottom of 9x13" pan.
~Put Potatoes, Carrots, Spices and Diced Garlic in pan.
~Add Tomatoes, mix together. Salt and Pepper and bake in a preheated oven for 60 minutes or until a fork can easily be stuck in to the potatoes.

Meat loaf
1 large egg, beaten
1 tablespoon skim milk
1 teaspoon Dijon mustard
1 tablespoon Worcestershire sauce
1 slice whole-grain bread
1 tablespoon tomato paste
1/2 medium onion, diced (about 1/2 cup )
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1 pound extra lean (91/9) ground beef
Directions
Combine the egg, milk, mustard, and Worcestershire sauce in a large mixing bowl. Tear or chop the bread into small cubes, add to the egg mixture and soak for about 5 minutes.
Add the remaining meatloaf ingredients and combine, using a fork.
Coat an 8-inch round glass or metal baking dish with nonstick spray. Transfer the meat to the dish and form into a meatloaf shape. Pour 1/2 cup water into the slow cooker liner to create a water bath for the baking dish. Set on low and cover. Cook for 6-8 hours.

Remove the fat in the bottom of the dish. Pour 1/4 cup tomato sauce over the meatloaf.
Return to the slow cooker,and cook 1 more hour. Remove the meatloaf from the slow cooker, and cool slightly before serving.

Russian Chicken

1 small bottle RED Russian Salad Dressing (don't use the orange one!)
1 envelope dried onion soup mix
1 small bottle sugar free orange marmalade

Combine above ingredients. Pour over chicken pieces and bake at 350 for an hour.
I use boneless skinless chicken breasts or tenders. You can double the recipe for a large crowd. Sauce can also be frozen.

APPLE PIE IN A JAR (Dellicious)

(My mom's)

Stuffed Peppers
(paraboil 12 bell peppers in salt water (let cool)

Brown in skillet 1 lb of hamburger
Add to this 8 ounces of . corn,
2 diced tomatoes,
4 slices of bread (cubed).
3 slices of cheese (shredded)
Salt and pepper to taste,
Dash of sugar.
Cook all together as few minutes until thick. Let cool and stuff peppers.
