Shaker Lemon Pie

Ingredients

3 Meyer lemons, cut into very thin rounds (using a slicer or mandolin is advised)
2 cups sugar
1/2 tsp salt
2 eggs
2 egg yolks
3 T. all purpose flour
egg wash (made from 1 egg beaten with a pinch of salt)
Sanding sugar

Directions
1. Toss: lemon slices, sugar ; let stand for two hours at room temperature.

2. Preheat oven to 425°F. Beat : eggs, yolks,salt. Add flour a little at a time. Mix well: egg mixture, lemons. Pour into chilled bottom crust, cover with chilled top crust, trim edges, pinch edges together. Cut slits in the top to vent the pie, then place in the fridge for 20 minutes.

3. Right before baking, brush the top of the pie with egg wash and sprinkle with sanding sugar. Bake at 425°F for 20 minutes on the bottom rack, turning halfway through. Turn the oven down to 350°F and bake until the filling puffs the crust up a bit, about 15 to 20 minutes. Remove from the oven and allow to cool completely, then chill for at least one hour before serving.

I have been using this once a week...one of Sister Joy Santa's first Shaker recipes

Shaker Spinach with Rosemary

2 pounds spinach
1/4 teaspoon fresh rosemary or large pinch of dried rosemary
3 sprigs parsley, chopped
1 green onion, chopped
2 Tablespoons butter
Salt
Pepper

Trim thick stems from spinach, wash the leaves several times in cold water. Chop coarsely and pile in a large saucepan with all remaining ingredients. Cook, covered, in its own juices about 5 minutes or until spinach is limp but still bright green. Serves 4.

Shaker Potato Salad

Cook 6 medium potatoes in their jackets in boiling, salted water until tender when pierced with a fork. When cool enough to handle, peel and cut into thin slices. Add Betty Crocker Bac-Os Bits (or another vegetarian bacon substitute). Stir in 1 medium-sized onion, chopped, and cook a few minutes longer. Take care not to brown the onion. Stir in 1 teaspoon salt, dash of pepper, 1 Tablespoon of sugar, and 1/2 cup vinegar mixed with the same amount of water. Heat to a boil, pour over potatoes, and toss gently. Serve with finely chopped parsley on top.

Serves 6

Mrs. Santa, this just looks ao good, but there is not cider available around me this time of year :( Have you tried it with juice or applesauce instead?

Mrs. Santa, the Shaker Cider Cake turned out spectacular. I made one day before yesterday. After friends came over there was not one crumb left, not even for a mouse. Tomorrow I'm making another one.

Yes, raw spinach is sweeter, I think. When I gave up potato chips I had fresh spinach leaves instead.

I hope you let us know how you like the cake. Our came out well and we enjoyed it with herbal tea.

I'm definitely going to make the Shaker Cider Cake this week. I didn't try the spinach recipe because I've never been a fan of cooked spinach. I like my spinach raw.

Shaker Cider Cake emoticon

3 cups sifted all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon nutmeg
1/2 cup soft butter (1 stick) {Blue Bonnet margarine}
1 1/2 cups sugar
2 eggs, well beaten (see thread of substitutions)
1/2 cup cider

Sift together the flour, baking soda, salt, and nutmeg. Set aside. Work butter and sugar together as thoroughly as possible (mixture is never really smooth) and beat in the eggs. Stir in flour mixture and cider, alternating them and beginning and ending with flour.Spoon into a greased loaf pan and bake in a preheated 350 degree oven for about 1 hour or until toothpick inserted in the center comes out dry. Cool To serve, cut in thin slices.

Mr. Santa and I liked this recipe. We had it with our dinner of baked sweet potatoes, and Gardein veggie burgers.

The Shakers were unusually attentive to the needs of their elders, and they developed a special diet, and special dishes, for the aged.

I will put one recipe a week here. If you would like to cook some of these wonderful recipes and let us know how you liked them Sister Joy Santa will luv your input.
