Had a lovely outing with the family. Went to a pub and had greasy cheeseburgers with sweet potato fries. Calories *just within* the ok zone, but definitely back to more conservative fare tomorrow.

I need to reserve the oven tonight to make a sweet treat to take to work tomorrow for Valentine's Day (Chocolate Cherry Mousse Brownies--haven't made it before, but it sounds good--it's too bad I can't have any for myself).

So it's a stovetop meal, probably stir-fry chicken with veggies.

Tonight's 'red meat' night, so I'm having a lean hamburger patty, some sauteed cabbage and a big green salad. Nothing fancy, but it'll taste good.

Made a stir fry with one boneless chicken thigh, and some asparagus, yellow and orange bell peppers, onion and broccoli with a little stir fry sauce. Had it over brown rice. Yum!

I started making dinner for my little family. They called to cancel, an emergency came up. So was stuck with a dozen chicken legs, thawed, more carrot slaw than I can eat. Taking the carrot slaw over to daughter's place tomorrow. The chicken I baked up, then cooled and put in freezer. The potato's I hadn't start with, so just baked 1 for myself.

Spent all morning digging up the water line (the builder put a hole in the pipe so I can't use my water pump) and repairing it.

Tonight I had 6 cheese & potato progies[small size 1 1/2 inch size] 3 slices of bacon crumbled on top of the progies and a greek salad.

I Used the Acti Fry machine tonight to heat and crisp the bacon and progies. Then sprinkled chopped onion greens atop when all was heated through. Saved time and reduced amount of fat from the pre-cooked frozen progies and bacon.

I use cookie sheets to bake several lbs of bacon at once. You won't believe all the fat that remains, there still some fat on the bacon but I think about 60% of the fat is removed, doing it this way. When bacon is cool, freeze on cookie sheets. Once the bacon is hard as a rock, pop the individual slices in large zip lock bag. No bacon gets thrown out because it went bad before using it up.

Tonight had left-over steak from New Years Eve dinner out. The smallest steak size on the menu was 10 oz. 's. Weighed the portion I brought home - had 7 oz.'s remaining. Good thing I ordered it medium rare. Made a beef and veggie stir fry, tonight, got 3 more meals packaged for the freezer.

Had one bowl of tomato soup 4 crackers and a glass of milk. The plumber was still here and the tap water was not available. I usually make tomato soup with water, but could not tonight so in went a soup can of milk. I used to always make it this way. I was looking forward to have creamy tomato soup. I had switch to using a can of water, a couple years ago. I was surprised that I didn't care for it that way any more. Every little change makes a huge difference in the calorie count!

Went out for dinner tonight - got a touch of food poisoning or the flu. Was in bed my 6pm and woke up just after midnight, so guess I'll be having all nighter and crash into bed in morning, when everyone is getting up!

I used whole wheat 6" pitas, not split in half. I think they would be pretty flimsy cut in half, so I just used a whole pita, flat. It's not that many calories and helps the fiber. I guess if you used a split pita you could toast it first and crisp it up a bit and it would hold the toppings better. I just didn't think about it and used the whole thing!

What made me think to do it at all was that out of the pack of 6 pitas, 3 of them had splits in the middle of 1 side-the pockets had popped while being baked, I just hate it when that happens!-so I was trying to be creative and find something to do with them that would allow them to be used whole and flat. It worked really nicely for me since I love pizza!

It's fish and chips for us, but low fat fish portions with sweet potato fries both relatively low in fat.

I've discovered pita pizzas so that's what I'll be having tonight. A pita bread, a brushing of pizza quick sauce and a sprinkling of low fat mozzarella cheese, baked until the cheese melts and it's dinner time! And since there are 6 pitas in the package, I'll have 5 more pita pizzas sometime later this week/weekend as well! I love using pita breads as they make for a very portion controlled little meal. As long as I am careful with the cheese topping, they are relatively low in calories and fat....love them!

I was going to make a roast beef dinner today for our Thanksgiving dinner today but I got a rotten cold. So called my daughter say stay home. I don't want them over and getting this cold-flu. Ya flu and cold syptoms combined not good!

POTATOES!!! I stopped at the potato warehouse and picked up 50 lbs of red potatoes for $8 and 50 lbs of russets for $7...that's 100 lbs of potatoes for $15.00 or 15 cents a pound...and in the stores right now - reds are going for 70 cents a pound and russets for 60 cents a pound! So I save $50.50 for my potatoes!

I recently joined the SparkTeam Cooking Through A Cookbook. I have two cookbooks devoted to vegetables. I'm starting by preparing--not ALL are cooked; I do love RAW--one recipe from each chapter in the larger cookbook. Today, I will pick some green and wax beans in my garden, so that is what I will look up in the cookbook. I actually prefer these raw and often eat them right in the garden, like I corn-on-the-cob--silk, stalk pulp, and immature grain.

Later in the years, the bean plants, without the roots, can be juiced. Add some beetroot for flavor, color, and some powerful cleansing. Actually, raw beet needs to be limited; it IS very cleansing.

Au Contraire Jersey Girl, everything was low fat, vegetarian dog in a whole wheat bun with home made salsa and extras, couldn't have been more healthier.

Roast Shoulder of Lamb Stuffed with Apples and Herbs, roast vegies and swiss chard for dinner tonight (probably more calories in this than last nights ..... go figure)
