Love these ideas. Keep 'em coming.

My fav sandwich for lunch is a roast beet Reuben sandwich. I roast beets ahead of time in the toaster oven (foil wrapped, scrubbed and EVOO rub, 350 for 40 mins or so til soft).

Toast pumpernickel bread, add Sliced roasted beets, warm or cold, add sauerkraut, daiya swiss cheese (or regular), with your choice of condiment. Warm in toaster until cheese melts.

Second fav, is toasted pumpernickel again, with daiya cheese and mashed avocado half, warmed until melted. This is my substitute for grilled cheese.

I love bean sandwiches! My partner thinks they're silly, but he also recognizes that's a cultural thing. After all, a bean burrito is basically the same thing (bean burrito--another super-easy recipe).

I like all these ideas. One of the things I like to make for a quick lunch is toast spread with refried beans, sprinkle chili powder and topped with lettuce, onion, tomato and grated cheese for dairy eaters. Its like a taco sandwich.

Sounds great, you two! And reminds me of two of mine:

1) cook slices of eggplant (aubergine) in olive oil until just getting browned and softening. Toss in tomato sauce, heat, and serve over polenta or pasta.

2) 1 cuo lentils, 4 cups water, 1-2 cloves garlic, 1 each chopped onion/carrot, 1/2 tsp. salt, optional olive oil. Bring to a boil, then simmer 20-30 minutes. I like it best with quite a bit of olive oil, but it's obviously healthier without it, and it's still good.

I liked the gravy...
My favorite is a basic Indian dal (lentil dish):

1/2 cup lentils
1/2 tsp cumin
1/4 tsp Turmeric Powder
2 Green chilli
3 tsp Oil
1 level tsp Salt
3 Garlic Cloves

How to make simple dal:

Boil the lentils with salt, turmeric powder and slit green chillies.
In another pan, heat oil, add the cumin and garlic pods, saute on a high flame till the garlic cloves are softer.
Add the boiled lentils into this with a little water, boil well for 15 minutes to incorporate the spices into the lentils.

Done! Add to rice, couscous, potatoes...

There are so many wonderful recipes to be had that I am hard pressed to select a favourite but here is one I use a lot :-
Veggie Mossaka.

1 aubergine, two potatoes , 1 red onion ( white if you want ) , 1 tin chopped tomatoes , 2 garlic cloves , some grated vegan cheese , 1 veg stock cube , salt & pepper to taste . As I am vegan I use vegan sauce but you can use cheese sauce if you are vegetarian . 2 Garlic cloves

Cut the aubergine into 2cm slices , fry in a couple of tabspns oil of your choice ( I use olive oil ) until Brown about 5 mins . Make the stock with the cube and 700 ml of water . Slice the potatoes and boil in the stock until just tender and drain , reserving the stock . Lay the aubergine in a dish and season . Dice the onion & garlic. Put the stock back into a pan, add the onion , garlic and a pinch of sugar and cinnamon cook for a couple over mins . Add the chopped tomatoes cook until reduced some . Layer the potatoes onto the aubergine and pour over the sauce . Make your cheese sauce , add a spoonful of yoghurt and pour over the dish of aubergine mix. Add the grated cheese and cook for about 10 mins at 200 deg c .or until the cheese is Browning . Done .

I'm looking for some easy veg recipes to add to my repertoire. What are your faves? I'll start:

1) World's easiest bean soup: a can of any kind of beans (whole or mashed), a can or bottle of tomato juice (or V8 or you can use water) and a jar of salsa. Add enough water to make it the right consistency for you, heat through, season to taste.

2) World's easiest vegan gravy: Mix 1/4 cup flour into 2 cups water or nutmilk or soymilk or whatever with a whisk or fork. Saute mushrooms and onions (as many as you want) on medium-low heat in butter or oil with salt and pepper to taste, stirring once in a while, until most of the moisture is gone. Give the flour mixture a quick stir and add to the veggies, stirring constantly until it bubbles. Done.

3) My favorite easy breakfast: toast whole-grain bread. Top with hummus and sliced tomatoes. Eat.
