Homemade cream of celery soup with celery, onions, garlic, potato and a dab of real cream all whirred up in blender. Green salad with (finally!) Romaine, greenleaf, arugula and cherry tomatoes.

That tells me to read the label before I buy anything new.

Curried Carrot Soup and Nell's Cabbage Salad made a nice lunch for me and my husband yesterday.

We all do the best we can, FirstMermaid. I occasionally forget to read labels too because somethings just logically seem like they should be vegetarian. Mushroom soup....logically should be made using mushroom broth. Not too long ago I bought a box of cookies at a Middle Eastern market and didn't read the label until later......beef fat! Fortunately I read it before I ate them, but who puts beef fat in cookies?!! I threw them in the yard for the squirrels and raccoons.

Tonight I'm going to make a big vat of gazpacho!

Thanx HollyStormCloud, I hadn't read the label on the soup can. I consider it a brief failing because I always read labels before I buy. My meal plans include dairy and eggs.

Next time I'll do this recipe:

1//2 c butter, 1/4 c olive oil, 1/12 lb mushrooms salt pepper, 1 tsp dried tarragon 1 tsp paprika, 1/4 c heavy cream, 3 1/2 c milk, 1 tsp lemon juice

Heat butter & oil in a large heavy skillet over a low heat. Meanwhile, wash mushrooms, remove stems, and slice fairly thin. Add to butter-oil mixture and cook about 5 minutes, stirring frequently. Add butter if needed. Sprinkle in salt and a large amount of pepper (more than seems reasonable). The freshly ground pepper adds wonderful flavor. Stir in tarragon, paprika and continue cooking 5 more minutes, giving mixture an occasional stir. Add the cream, milk and simmer until sauce has thickened slightly-it should have body but should not be really thick. If soup seems too thin, stir in a little cornstarch or arrowroot and cook until it reaches a good consistency . Just before serving, add the fresh lemon juice. Serve with crisp toast.

Makes 4 servings

I know that not everyone in the group is veg*n, but in case you are and weren't aware, Campbell's Golden Mushroom soup has beef broth in it.

Black bean soup with...

Grandfather's Potato Salad (15 potatoes boiled,diced; 12 hard boiled eggs diced, 3 bunches celery chopped fine, onions 2, 1 bottle stuffed olives chopped fine, 1 cucumber, 1 bottle piccalilli)

Dressing for potato salad(1 cup olive oil or more, 12 hard cooked egg yolks, 1 tsp dry mustard, 1 tsp salt, vinegar)

Navy Bean soup

In a soup kettle combine and mix well all ingredients.
Cover and simmer on low temperature for 8 hours or more.

1 cup finely chopped carrots
1 cup finely chopped celery, including leaves
1/2 cup finely chopped onion
1 (16-oz.) pkg. dried navy beans, rinsed
2 quarts (8 cups) water
1 cup vegetable juice cocktail
1 tsp. salt
1/8 teaspoon crushed red pepper flakes
*******************
Pasta Salad

Pasta, 4 oz. (1 1/2 cups) uncooked rigatoni (pasta tubes with ridges)

Dressing
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano leaves
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
2 tablespoons white wine vinegar

Salad
1 (15-oz.) can garbanzo beans or Progresso™ Chickpeas, drained, rinsed
1 (2 1/4-oz.) can sliced ripe olives, drained
3 green onions, sliced
2 small tomatoes, seeded, coarsely chopped
1 medium cucumber, seeded, coarsely chopped
1 (10-oz.) pkg. Italian-blend mixed salad greens
2 oz. (1/2 cup) crumbled feta cheese

This week I've been defrosting chipotle lentil soup I made a couple of weeks ago and having it with spinach salad. This weekend I will be making a faux beef stew with herbs, Dijon, and porter beer.

End of last week I made some leek, carrot, miso soup. Had some left over along with some mushroom gravy (mushrooms, onions, soup broth, corn starch, and seasonings) from Thanksgiving. Mixed them both together with a little extra water for dinner last night. It was good although wouldn't be able to make it exactly the same again.

I would be very interested in some good soup recipes. Every time I make a soup recipe, to me, it is just okay. There always seems to be something missing. Yes, I follow the recipes. Yes, I use enough spices. Sometimes, I will experiment & add extra ingredients. The results are the same. It's just okay.

I love soups and salads. I made HH Tuscany Soup on Sunday. It serves four, hubby isn't a fan of kale so it's my lunch for four days.

I love soups. We make a large batch and either freeze some or have it over few days. Currently we make kale soup, potato leek, black bean and butter nut squash soups. In summer we use different vegetables.

Good idea! I made lentil and spinach soup last week and am making "beef" mushroom stew for dinner tonight. Healthy and filling, especially when paired with a green salad.

We would like to challenge our team members to have at least one meal a week that is a soup and salad in hopes you'll let us know your favorites. Doing so will give us all fresh ideas for our yummy meals that give us energy to do our exercises.
