I ate a late breakfast, so just now getting hungry for lunch. Will probably skip supper as I don't sleep well if I eat too late in the evening.

I plan to have a big salad with some of the dressing I brought home from Calypso's yesterday. There's some leftover black-eyed-peas and sauteed cabbage with onions that I can have. I will have some pink sparkling juice called "Rose" that we have left from the holidays for my dessert.

I had to go to Nashville today for doctor's appointment, so ate lunch at Calypso's. I love their healthy menu. I ordered the black beans, mustard greens and a big salad with light dressing. It was all very good. I am tired out and going to bed early. Not hungry for anything else.

Today was a crazy day. I got stuck at work and did not eat until later in the day. I ate some homemade trail mix (nuts, dried fruit, and coconut), an apple, and some raw veggies before going to bed.

Ate a late lunch since we were at a car dealership most of the day...vegetarian pizza (thin crust with lots of veggies and moderate amount of mozzarella). Had 2 pieces of chocolate when I got home. Not eating anything else tonight.

You should try frozen bananas and orange juice with a little vanilla. It tastes just like an orange creamiscle. It's one of my favorite smoothies.

I skipped lunch. For supper I made yellow rice and fried some gluten "mock duck". For a treat I blended frozen banana pieces with dark chocolate almond milk.

Tonight's dinner:

Had to pick green tomatoes due to frost a couple of days ago. Looked up recipes to use them and saw soup. Did my own version looking at other recipes. Can't give exact recipe I made as I didn't measure but approximately as follows:

Green tomato soup

4 cups roasted green tomatoes
2 cups cauliflower (mine was already cooked)
2 cups white beans (about 1 can, I used home cooked)
1 med onion
3 garlic cloves
1-2 teaspoons Italian seasoning
1 teaspoon smoked paprika
2 cups veg broth
Pepper to taste
Did not add salt add I used store veg broth since I need to make more homemade.

Heat and puree.

I tasted it before adding the smoked paprika. Not sure which way I like better. I mainly added it because some of the recipes I looked at had bacon or smoked ham added so I added the smoked paprika for a similar taste. Also, probably should have sauted the onion and garlic a little first but thought about it after I put the roasted tomatoes in the pot.

I enjoyed it. Thought it was real good.

I am making "chicken" and dumplings for lunch today. I picked and fried some okra yesterday. Had left overs which we'll have again today. Don't have that often. It's a treat :)

I had canteloupe, banana, and some chai tea for a snack. Then dinner was a homemade Massaman Curry with sweet potato, tofu, mushrooms, and broccoli, served with brown rice. So good!

For dinner I had 2 cups steamed Normandy veggies mixed with a Lean Cuisine Sicilian-style pesto with lentil pasta. Vegan with no bad ingredients mostly organic.

Veggie wrap at Subway. Wrap itself is 130 cal, 0 sat fat, 0 polyunsat fat, 0 monounsat fat, 0 cholesterol, 11 g fiber, 12 g protein. Then include only veggies, oil & vinegar. Delish!

Church dinner today...I am taking a dish of cooked organic carrots and fajitas made with homegrown slices of red and green bell peppers, onions and some "beef strips" I had in the freezer. Using the last of the corn tortillas. (The pantry challenge is really cleaning out the freezer and fridge)

Supper will be the last of the blueberry crisp with a warm cup of Pero.

Lunch....lettuce wrap with veggies

Dinner....tomato soup with carrots, potatoes, and rice. I also made baked tortilla chips to go with the soup

Lunch was Kraft mac and cheese (using from pantry), left-over kale and sweet potatoes

Supper will be left over blueberry crisp and a warm cup of Pero (coffee substitute)
