HAVE YOU EVER USED DANDELION? My older family members used to gather fresh leaves in Spring and made a gravy like thing with fried bacon and bacon grease. I think their was vinegar in it also. Sorry about small print.

LIttle Red Hen, I am unable to read some of your recipes or tips because they are too small and I don't know to fix it, can you help me?

We just made this soup today.....and it's in my calorie range!

PASTA FAGIOLI. (Serves 4)

Ingredients:

1 tablespoon vegetable oil or olive oil
1 medium onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
1 pound either ground beef or ground bison. (I used bison as it's leaner.)
1 can (15 oz) Progresso™ cannellini beans, drained, rinsed
1 can (14.5 oz) diced tomatoes
1 carton (32 oz) Progresso™ chicken broth
2 tablespoons chopped fresh parsley
1 teaspoon dried basil leaves, crushed
1 cup uncooked elbow macaroni (4 oz)
1/2 cup shredded Parmesan cheese
Salt and Pepper to taste - as much or as little as you prefer.

Steps:

1). In 3-quart saucepan, heat oil over medium-high heat. Add onion and garlic; cook and stir 2 minutes. Next add the beef or bison and brown thoroughly. Add remaining ingredients except macaroni and cheese. Heat to boiling. Reduce heat to medium-low; cover and simmer 10 minutes, stirring occasionally.

2). Remove cover; increase heat to high. Heat to boiling. Reduce heat to medium. Add macaroni; cook 10 to 15 minutes or until tender.
Sprinkle each serving with cheese.

Nutrition Facts:
Serving Size: 1 Serving equals 360 calories.

I like pickled beets & have found an easy way to get some. When my sweet pickles are gone I add a can of drained sliced beets to the pickle juice. I get my beet fix!

I have some peppermint in a container that I have, and some thyme in bowl. (I like to have green things in the house during the winter.

Basically with sprouting I put seeds in a sprouting jar with a mesh top (you can also use cheesecloth) and rinse the seeds a couple times a day.

Radish sprouts are yummy to add to soup, mung bean sprouts are good by themselves.

I also sprout oiled black sunflower seeds (yep, birdseed!), but for those I use 1/4 cup of dirt and put them in a cabinet for a while. They are now greening up on a windowsill!

@WALLOWA I have never done anything like that. Do you grow your own herbs etc also?
