Enjoyed watching this, thanks. I'm starting to think that the secret to quick plant based meals is doing prep of beans and grains and veg ahead of time, then putting them together in different ways.

I haven't been able to master this yet. Just observing that it's a good idea. I envision myself eating bowl after bowl of plain pinto beans all week and get turned off. The variety part baffles me.

I stock up on organic canned beans and frozen grains, and some frozen veggies.

If I have an additional couple of servings when I cook, I freeze for the weekend for my husband and me. One of the things that threw me when I started eating plant based was weekend quick lunches, and this helps.
