Today for lunch, I had a large carrot, a potato, an onion, about a fourth cup of turnip, and about a half cup of cabbage. Yes, it was a boiled dinner with ham. And that's a lot of vegetables!

I was doing great but then I got caught up and carried away and haven't been able to maintain my roll.

I'm going away again this weekend but I plan on being better prepared and bringing lots of fruits and veggies to snack on.

This weekend my grandmother and aunt both told me their secret for my cousin who HATES veggies is to add Zucchini to almost everything- Pasta sauce, meatloaf, and my grandmother even likes it in her eggs or pancakes!

Someone at work just suggested putting spinach down before putting the sauce on pasta.

So far we are off to a good start.

The combined total of # of times that we had our 5 a day was 9....not bad for just starting it out and for such a busy month.

Keep it up and keep on posting.

After a good week I'm not doing as well. I need to remember to hit the produce section again! I had some great eggplant Parmesan for lunch yesterday and a grapefruit for breakfast. DH made dinner and I got brussel sprouts and potatoes.

I need to get back on track!

Packed in my "food durning work bag" for today are 5 cherry tomatoes, 1 small green pepper, 8 large green beans (all from my garden) 2 celery stalks w/crazy richards natural peanut butter, 1 peach - sliced w/ 1/4 cup oats & 1 tbs brown sugar, & homemade dehydrated veggie "chips". So how many servings is that? 5 or 6? Dinner will be homemade pizza: 1 slice w/ broccoli & one slice w/ onions, tomato & eggplant.

I had 1 stalk celery
a small salad (romaine lettuce) that had 3 grape tomatoes
about 2 cups of fresh pineapple
also vegetable soup, not sure if that counts for anything
I would say 4 servings.
not great, but not bad.

I've got another big salad today- 2 cups of lettuce, 1 cup tomato, .5 cup green peppers, .5 cup onions and fat free Feta this time!

For snacks I brought 2 celery stalks, a cup of baby carrots, a apple and an orange!

Super challenge. I need the help on this.
Yesterday, 9/3:
Lunch: celery, onion (but just a slice), blueberries, pineapple
Dinner: tomato
I need to review serving sizes too.
Total: 4 (plus that slice of onion, not sure if that counts for anything)

so far today, large navel orange, 1/2c cauliflower, 1./2c broccoli and 1/4c baby carrots. will have sweet potato and watermelon as part of dinner. I need to refresh myself as to what a serving is. emoticon

This challenge is perfect- I always have trouble with this.

Today I made a huge salad- 2 cups of lettuce, .5 cup tomato, 1 cup green peppers, .5 cup onions and some skim cheese!

For snacks I brought 2 celery stalks, a cup of baby carrots, a pear and an orange!

I'm ready!

I had one small banana and a quarter cup of frozen blueberries with my cereal this morning.

For lunch I had veggie soup (does that count for veggies?).

For snack I had a very small apple.

Tonight for dinner I'm going to have a baked potato and butternut squash. :)

A new challenge for us for this school year (or at least this month)

Eating 5 Fruits and or Veggies a day. Come on now no sad or ugly faces.....we make our kids do it now we need to take our own advice to heart....it is good for the heart too you know

So post and let us know how you do....only had 1 fruit today? Thats ok let us know...1 is better than none.
