They look great Sue! I can't make these though........I would end up eating them all! I have no control with something like cornbread or muffins of any kind, for that matter. Sighing.........

Quite alright! I ended up adding just four tablespoons of applesauce and 1/3 cup of Truvia and I’m happy with the taste now!

I know I add 1/2 c unsweetened applesauce as a fat replacement in baked goods, but these don't seem like they need more moisture..... I'm sorry I can't be helpful.

I made them tonight... looked good, tasted terrible. So sour. I am trying to figure out how much unsweetened applesauce and how much Truvia to add to not add any points, but to sweeten these babies up. I am thinking 1/3 cup of each. Anyone have an idea?

Ice Box Pumpkin Pie

Sprinkle 1 box of sugar free butterscotch pudding over 1 regular size can of pure pumpkin. Mix and add 1 t vanilla, dash of cinnamon, and 1/8 t pumpkin pie spice.

Put graham crackers in 8 X 8 Pyrex then spread above filling over graham crackers. Top with Cool Whip

Pudding is 3 points, add points for graham crackers and cool whip.

3 point cheesecake, recipe serves 8

3- 8 oz bars fat free cream cheese
1 cup sweetener ( I'm going to use Stevia)
1 tsp vanilla
1/3 cup light sour cream
4 eggs

Preheat oven to 350 degrees. Beat cream cheese until fluffy, about 3 minutes. Combine sour cream, sweetener and vanilla, mix about three minutes. Add one egg at a time, beating for additional minute, each egg. Lightly grease a 9 inch springform pan and put on a baking sheet. Pour in filling, Bake 45 minutes until lightly brown around the edges. Run knife around edges of pan to loosen. Let cool. Chill, covered, at least 4 hours. Drizzle with sugar free caramel sauce.
