We now have a set of threads in the Low Carb Recipes forum for breakfast, lunch and supper menus. And a set of breakfast and lunch threads in the Main forum. And another thread in the Main forum called "Just Wondering" that some people are using to post their menus. Enough already!

Let's close out the menu threads here in the recipe section, and everyone post on the threads in the main forum. Russell, will you start the snack and dinner threads there? Obviously, you can all post wherever you want to, but enough people have said that they wouldn't/didn't look in the recipes forum for menu ideas to make it seem reasonable to move them to where more people will see them.

The rest of my chili is supper

8 ozs of ground beef
1/2 can NS diced tomatoes
1/4 cup kidney beans
1/2 cup diced onion

topped with 2 ozs cheddar cheese!

Calories = 784
carbs = 23 g
fat = 48 g
protein = 53 g

I'm trying to use up leftovers from the freezer. I had a sort of taco salad sort of thing, with leftover Taco Zucchini Casserole, shredded cabbage, lard, and Italian dressing. It was a lot better than it sounds!

Change of plans. I made a sort of taco saladish thing, with Cuban Cauli-rice over lettuce with homemade Italian herb dressing.

Made a sausage/hamburger meat sauce over pasta for "the boys" and just took some of the raw meat mixed with egg, garlic and onion before making their sauce and stuffed it in green pepper halves with a spoonful of the lc jar tomato sauce on top. Baked those while I got the rest ready for them. Easy, good and everyone was happy... better yet, I now have leftover peppers for other meals.
The rest of the week is a Swissburger with sauteed onions and salad (with the bun and apple slices for them). Blackened broiled Mahi and salad (with mac and cheese for them). Chicken kabobs (with rice for them), and Fridays are what I call a FFYS (fend for yourself) or leftovers day... the kids favorite day because they can have "kid food" for dinner and get to eat while watching tv... we call it floor picnic Friday! :)

Keep moving forward... progress not perfection!

Tacos for my 15 year old son (very picky eater and not LC), taco salad for hubby and I. This is a good meal for those who have to cook for family members who are not LC or won't eat salad because there really isn't anything extra to make, the taco meat and other toppings are used for both so it's just a matter of throwing them into a shell or onto lettuce. I think that's one thing that can be hard for those with families - sometimes it feels like I'm making two different meals. So, this one's a winner in that respect and it's quick and delicious too.

Lunch was a 7 layer salad.

Last night was meatballs over ricotta. DH cooked so I closed my eyes and didn't ask if he used breadcrumbs...

No idea what's on for tonight, but lunch is my usual chicken thighs coated with BBQ seasoning with a tiny little spinach salad on the side.

Let's get this thread going again!

Last night I had Chicken and Spinach Timbals (A very old-fashioned dish from a 1927 cookbook - sort of individual cheeseless quiche. Didn't turn out great.) and a carrot/cinnamon/sunflower seed salad.

Tonight I'm having a salad of turkey, celery, grape tomatoes, sunflower seeds, and mayo. It's good for a "sack lunch" since it doesn't need to be heated and the celery doesn't go limp from being in with the dressing.

We ended up eating out and I had a whole deep fried(not much breading, really) tilapia with green salad and some broccoli cauliflower veggie mix.

Tonight we tried our favorite shrimp scampi recipe with spaghetti squash instead of pasta. I had my doubts going into it, but WOW was it good! My hubby grilled us some NY steaks too. Yum-mO!

Sorry zucchini didn't work for you... maybe next time try salting it and blotting the moisture like eggplant for eggplant parm? I saw that trick on some cooking show years ago.

Tonight's dinner is Mexican Pizza (low carb pre-baked cheese-egg based crust).

I have made eggplant that way and it was fine, tried zucchini and it did not work. I think zuchinni has to much moisture. Thanks for responding

Hey Debramn51, I keep forgetting to check my recent message board posts! We've had chicken strips in the oven that way, and those were really good, but I haven't tried zucchini sticks... I had problems with those being soggy in the oven with regular breadcrumbs, so I'm not sure how the pork rinds would perform there. But if you try it out, please let us know how it goes!
