Sauteed chicken - half with hot sauce and ranch, half with salsa verde (can't decide which one I want, so I'll have both!)
Veggie plate - broccoli, cucumbers, celery, peppers with hummus
My "fast and easy" beans - 1/2c black beans, 1/4 c diced tomatoes, hot sauce, chili powder, cumin, topped with cheddar cheese.

I'm just waking up and haven't made it through a cuppa coffee as of yet. I do have cooked chicken, flap steak and a inch thick "steak" cut off a pork tenderloin all cooked and just need to be heated up...so it will likely be something from above with roasted cauliflower and a simple salad.

I'm making a family favorite, Creamy Chicken Curry Soup. Ingredients include chicken, strips of bell pepper and onion, Almond Breeze unsweetened almond coconut milk (0 net carbs and great for rich creamy soups), some lemongrass, a little heavy cream, a few tablespoons of butter, a few teaspoons of chicken better than bullion, Lawry's garlic salt, yellow and red curry powder to taste. For family servings, I ladel this over a scoop of rice in a bowl, but for me no rice and just as tasty IMO. The whole family loves this soup and request it often! For the little one who likes it less spicy I serve hers before adding the red curry which is alot more spicy than the yellow curry. I've also added some chopped spinach to this soup for a twist. I'm having friends over for supper tonight. I prefer to keep it simple! They are international students and the idea is to give them family style home cooking, like I would serve my family (if I had one) or like I eat myself. Tonight we're having Crockpot Pumpkin Hominy Chili, coleslaw, and corn bread muffins (for the guests, not for me).

Tonight's dinner was AWESOME. I like to pull all the stops out when friends come over. Tonight we had pork roast smothered in dijon and cumin to marinate overnight, and roasted low and slow until it fell apart, Then I deglazed the pan and sauteed up a bunch of sliced mushrooms and made gravy out of the drippings, served over phauxtayteaux (cauliflower mashed with cream cheese, whipping cream and chives) and a side of sauteed cabbage with bacon and onions. DEEELISH!

I grilled a flap steak rare the other evening and will pop it in the little convection oven to heat up to medium rare....simple salad, too.

Last night was a concoction of leftover chicken, spaghetti squash, onion, broccoli, and cherry tomatoes, all cooked up in chicken drippings.

Probably left overs again. If there is enough pot roast left, it will be a repeat of last night. Roast and salad. If not, then left over vegetable beef soup left from my girl's meeting at church the other night, although it has corn, peas and carrots in it, so it is not my first choice.

Last night I was lazy and not hungry, so just fried some cabbage with some sliced-up hot dogs. Tonight I'll have Freezer Soup, which is soup I make periodically in a huge batch from odds and ends of stuff I've frozen instead of throwing away. I need to use up what's in the freezer so I can make another batch with the stuff I've saved!

Never got around to eating the burger last night. Had scramble eggs with bacon, fresh spinach, havarti & breakfast sausage crumbled instead....it was tasty!

Today I'll have that burger, some mahi-mahi, grilled chicken if the mood suits and some chilled boiled shrimp as a snack.

We had no time fro cooking today because we were working on building a barn before the weather gets too cold. We bought baked chicken at the grocery store and added homegrown tomatoes and carrots and some parsley. For dessert we are having homemade low-carb ice cream, just raw whole milk, cream, Xylitol and vanilla. Yum!

I grilled a couple burgers last night made of ground beef, chopped spinach, fresh parmesan, chopped artichokes and grated onion with a healthy dose of sriracha for heat. Just going to heat one up tonight.

Mostly, I just wanted to start a thread to see what everyone else is eating, since that's where I often get my own inspiration from. :D

I'm in agreement with you, LivinMyDreams, but somehow unless they've had a week to think about it and shop for it, it doesn't happen... at the moment neither of them are even HOME for dinner 4 nights a week, since they're in college... still they gotta eat SOMETIME, and I think they need to be doing more on the weekends!

I had planned to make a Taco Zucchini Casserole (the zucchini needs to be used up), but didn't feel like cooking tonight. So I just made some soup out of bone broth (which I've had cooking in the crock pot all day), leftover spaghetti squash, some grape tomatoes, and a couple of eggs. Not great, but ok, and very easy and the spaghetti squash needed to be used up.

I would suggest that since your whole family are grown-ups that each one take a night to figure out and make dinner for everyone. No it should not be just you to take care of that for everyone.

We are also having burgers tonight. Straight whole ground beef probably with cheese. My non LC hubby may want fried potatoes to go with them but we will see about that. Will probably do green beans seasoned with bacon grease.

Have to go grocery shopping though on the way home because I have no low carb veggies right now.

Our whole family is on low carb. This is easier for us than a lot of families because our kids are grown and frankly, NEED to be on low carb as much as we do. So we all have our stock faves for breakfast and bumble along as best as we're able for lunch most days, and of course, EVERYONE gets kinda tired of eggs and salad, but "What's for dinner?" is a question that makes me CRAZY. It's like, for some reason, I've been given the power to magically calculate in my head what we have in the freezer, pantry, fridge and budget, all while reading everyone's minds for what they're in the mood for, while ALSO remembering that this one hates mustard and that one is tired of chicken, and the boyfriend (who is also low carbing but thinks ketchup is a vegetable) is also on his way over. Hungry. NOW.

So, my fellow fine feathered friends who are livin la vida locarb, "What's for dinner?!"

Tonight, we're having "burgers" which means a 50-50 blend of ground beef and turkey with spices and garlic fried in patties, covered with cheddar jack cheese and sauteed onions, served on a schmear of a 50-50 mix of mayo and BBQ sauce with a dash of horseradish in it. Miscellaneous salad on the side, probably ceasar, we have romaine to use up and some ceasar-flavored almond crunchies in the pantry.
