Breakfast - 1 banana, blueberries (fresh frozen) .5 cup.

Snack - V8 VFusion Strawberry banana (light).

Lunch - Black Beans .5 cup; also Saffron Rice .5 cup

I've been craving Cole Slaw for weeks now and eating it for breakfast and all the time.

I wonder with all those good things in it, if my body is demanding it more.

Cole slaw has cabbage - so you had at least one helping of veggies yesterday. Cabbage has fiber (2g per 1 cup of cabbage), it also has a good amount of Vitamin C and B6, Folate and Pantothenic Acid (Vitamin B5) although not much. It also has a good amount of Potassium.

Thursday 11-20:
Breakfast - 1 banana

Snack - V8 VFusion Strawberry banana (light)

Lunch - .5 cup cucumber salad (sliced cucumbers, sliced onion and diced red bell peppers in vinegar/oil). Also .5 cup pinto beans.

Dinner - another .5 cup cucumber salad and .5 cup pinto beans.

I measure my servings of veggies out. to be 1/2 a cup. all of them. I think that 1/2 a cup is one serving.

But today is not going well for veggies.

For yesterday (11-17) I had a banana for breakfast,
an apple as a snack, black beans (with tomatoes & onions) with dinner.

Does the lettuce and tomato on a burger count as a veggie?

I had veggies at both my meals today (not including breakfast) and at dinner I made pasta with tomato sauce. I don't count the sauce as a veggie. I looked at the pot and thought: wait I should add broccoli for my veggies.

this is why I like this challenge: so often I don't eat enough veggies but I never would have known it, if I didn't think about it specifically.

Okay,
Today is the 16th. Day 1 of the Nov 16-22 Challenge.
I had a salad for lunch (lettuce, green peppers, onion, jalapeno peppers, black olives, and a little ranch dressing). I had black beans (with tomatoes and onion and garlic) with dinner.

I'm at the veggie starting line!

How about some roasted asparagus?
Just take some fresh asparagus, lightly coat with EVOO (Extra Virgin Olive Oil - thanks Rachael Ray), sprinkle with pepper and some Parmesan cheese and bake at 375 for about 15-20 minutes - until they just start getting soft. I like a little crunch left in them, plus you don't loose as much vitamin efficacy.

OK Single Gay Men

here is our first challenge. its an easy one. We are going to make sure we eat Veggies twice a day, each day, starting on Sunday the 16th through Saturday 22.

Who's in?
Post ideas and suggestions and progress.
