I just learned about vacuum sealing salads in a jar. I tried it and it works! I bought fresh greens, washed them, spun them out, and cut up and put in wide mouthed mason jars. Lasted 8 days and the salad was good, the greens were crisp and tasted fresh! I am now doing this weekly, will never have an excuse not to eat a big plate full of greens daily!

Raw kale salads. The longer kale marinates in a lemon based salad dressing the better. I make a huge salad and it lasts for a week. I slice my kale in thin ribbons, of course minus their huge ribs. I put in a large bowl and squeeze a fresh lemon over it. Toss well and leave sitting out on your countertop. Every now and then retoss to really get that lemon juice working to tenderize the kale.

After a couple of hours I season the salad with some sea salt, cracked pepper, garlic powder, and extra virgin olive oil. Mix well. I then throw in some thin sliced apples or chopped apples, dried cranberries and mix well. I usually add a Raw crumbled Feta if I have on hand or Raw Blue cheese. These are expensive so if you can't find these then use the ones you find in your grocery store. The cheese just brings the salad to the next level, it works really well with your lemony dressing.

I get my Raw cheese from a friend that raises goats or at Wegman's or Whole Foods.

I make meals from frozen berries, yogurt and ground nuts. Delicious, I could eat that 3 times a day.

Raw flax cracker. Top with Almond butter or cashew butter. Raw smoothie mix. Juice raw, homemade will store for 3 days.

Ok, here is my problem: I am a nurse and work @ night: eleven hours per night, several following nights. My problem is that most of the time after my last night I am out of fresh fruit and vegetables. I always want to go shopping but feel too tired at the end of my working week and just hang before TV, munching on whatever I can find in my cupboards. Somebody an idea on what I can prepare and keep longtime on forhand for those days? Is it for example possible to freeze certain recipies?
