My husband made a Caribbean rice and bean dish tonight that also had green peppers, onion, and mango in it. It was kind of strange but I liked it.

Two more blood sugar crashes. I think I am just doing way more physical work than I am used to. I would much rather use my mind than my body. I am getting too old for this heavy duty stuff. Made meatloaf and mashed potatoes with Japanese long beans.

My blood sugar bottomed out on my twice already today. Working a bit too hard. But I made sesame chicken and rice for lunch with grape tomato salad. Still too low two hours later so I added a banana to that and will take it a little easier this afternoon till things come back up to normal.

Wolfpack burgers - kind of like sloppy joes only with a mushroom/cheese sauce instead of the tomato sauce. Really good stuff! Also a cucumber salad and a Halo - not for my head, the eating kind.

Corned Beef and cabbage of course! Last night was our Parish St. Pat's Dinner and I planned and went prepared so that I could "eat clean". I did stick to the pan and I am so motivated today. People always bring appitizerrs and drinks to these dinners so it was not awkward to bring rhings for the table. The couple who introducd me to the Wheat Belly diet year ago was at our table so they enjoyed the suerkraut salad, cauliflower tabbouli, and the Fudgy fat bombs. I took a 33 oz bottle of diet tonic colored green and some lime slices and didn't miss the Irish Mist and wines that everyone else was drinking. God bless, havea sparkling day!
