Yes, the smells of fresh baking always make you hungry. I worked in the grocery business for many, many years and they always wanted us to cook sausage samples in the meat dept where I worked. the smell and taste sold many extra pounds of meat. Grocery stores do what they can to increase their sales and profits just like every other business.
It is up to you to stay away from the extras.
Don't forget the smell of comfort foods. I worked in the grocery business for many years. One of the tricks was to cook potatoes and onions in the deli. A customer would walk in with the idea of picking up 1 or 2 things and decide they needed more. The same idea is used in the retail business with candles or incense and by Realter's simmering apples and cinnamon on the stove.
