But I’m really trying to improve my eating habits & my health. So on tonight’s menu is grilled chicken, spaghetti squash, marinara sauce, and a sprinkling of shredded cheese. After one taste I’m wondering why I haven’t been eating healthy all along, this is delicious!See this image largerI took two eggs and 1 tablespoon of water and whisk them until they were kind of watery. Then I put them in my 12 inch skillet and spread it out really thin and cooked it until it was like a tortilla shell. After that I sautéed some veggies and turkey breast and made it like a giant stuffed carb-friendly burrito! It was fast, easy, hot and delicious! So this morning I walked to the coffee shop. There are more hills & traffic on this route, so my time was slower. On the up side the distance on my log was only to get there, it doesn’t include the walk home.
