It's crazy to think that I would actually be enjoying cooking this much a few months ago. I'm loving the experience, even if I do have a few flops. This morning I ventured to make Huevos Rancheros after watching Throwdown with Bobby Flay last night. I figured it couldn't be that difficult and I LOVE eggs, so what the heck? My butt crawled out of bed this morning and went straight to the store and got veggies to make it. It turned out really good. Corn tortillas (not the best thing...but hey, ya gotta live, right?), eggs over medium (fried with Pam), refried beans (fat free in a can), black bean & corn salsa, sliced avocados tossed with lime juice, reduced fat mexican cheeses, cilantro, green onions and fat free sour cream. The recipe I found used all full fat stuff, so I swapped out as much as possible.

The original recipe had 514 calories, 34.9 grams fat (14 saturated, 13 monounsaturated, 3 polyunsaturated), 29.4 grams carbs, 8 grams fiber, 23.4 grams protein

Mine had 347 calories, 20 grams fat (5.8 grams saturated, 8.1 monounsaturated, 2.2 polyunsaturated), 21 grams carbs, 6 grams fiber, 22.3 grams protein

And it was soooo delicious!

    I am a cooking queen! When I watch Food Network, I often jot down some of their recipes to work with later on. Then, when I do attempt to create the dish, I always look for things I can substitute with. Instead of mayo, use regular yogurt. Instead of bacon, used a light ham.

    Little things like that can make a big difference! I'm glad other people enjoy cooking as much as I do!
