Made healthy tacos for dinner

Made an old Friday Dinner favorite Healthier:

swapped out ground beef for chicken, regular tacos for whole wheat, and of course a little Low fat cheddar cheese on top.

Whole wheat tortillas, shredded chicken breast, black beans, LF cheddar cheese salsa, lettuce & tomatoes. Taste better than the not so healthy taco. Hmmm, maybe I could actually eat this way 4ever!

    Yum! Here's a really healthy version of salsa that I make if you're interested...
    2 tomatoes, diced
    1/3 onion, diced
    1 bundle cilantro, chopped fine
    1 cup frozen sweet corn
    1/2 cup fat free Italian dressing

    Mix everything together well. Now you have a delicious, fresh tasting salsa to go on anything! I like to put mine on chicken or heap it onto a burger instead of having it on a bun.
