One Step at a Time

The sun is shining today and it's beautiful! It reminds me of early spring. Odd for January but I'll take it. We are supposed to be in the high 50's my Sunday, which again is weird. Maybe I can get out for a nice long walk in the park. That would be nice. lol

I don't know what I'm writing..ha ha. I am just glad to have another opportunity to live and live better than yesterday! I know that weightloss takes time and with each day I pray to be better at it than the day before. I look forward to getting rid of t his extra belly roll or two. That is so exciting! I can't wait until I can walk into my local clothing store and buy what I want! I am tired of ordering my clothes or going to Lane Bryant! There just isn't much I like. I am tired of settling for what is available instead of what I want! I swear, they have had the same clothes forever and they are way over priced! Then again, I guess that is a lot of fabric.

Anyways, I need to start making a meal plan! God knows It would make a difference! I am so unorganized right now. My work schedule stinks 12-9pm m-f. My lunch time consists of making dinner for my family... my family consists of my disabled mama and my 13 year old son. We all need to eat better. My mama has kidney problems so has to eat low salt. Well you just can't make a meal in half an hour that isn't some sort of processed.. or can you?
Perhaps if I plan...lol

    I love my crockpots --- I have a couple. I also love my pressure cooker. I learned you can cook a whole chicken in 20 minutes in a pressure cooker!! While that's cooking, make a fresh salad OR boil some noodles and cook some veggies and make a casserole with it. Maybe make your casserole in the morning since that's when you have a bit of extra time. Then heat it for dinner. I have learned to cook 2 chickens on the weekend and pull the meat off the bone. I place all of the meat in gallon-sized ziplock bags. Then I can make meals with it later (enchiladas, casseroles, salads, sandwiches, etc). Since the chicken is already cooked, the prep time for most meals is greatly reduced. I love soups and chilis during the cold winter months and those come out HEAVENLY in the crock. They simmer all day and have the house smelling of dinner when you walk in the door. What a treat to have dinner waiting for you when you get home! You can totally do this. It just takes a bit of planning and (for me) a lot of cookbook reading.

    Try using a crock pot to cook in. Throw everything in it in the morning turn it on, when you're ready to eat, your food is done. If your family is eating at differnet times, they can help themselves to the crock pot meal, maybe balance it with a side salad. You can make everything from a pot roast with veggies to desert in a crock pot.

    Yes you can make a meal in half an hour that isn't processed. Plan ahead. Thaw frozen food when you get home from work so that when you're ready to cook, it's ready to be cooked.

    Try herbs and seasonings to get rid of the salt.

    Lane Bryant is where I used to shop too. I only shopped the clearence merchandise though to cut down on costs.
