Delicious new recipes from the weekend

With the holidays over and our annual "No Spend January" (we buy NOTHING except groceries, gas, and pay bills) in full force, we have to be more creative to entertain ourselves on the weekends...no dinners out with friends or trips to the sports bar to watch football. This weekend, we tried three new things that we both loved!
First, on Friday night, we made Penne Rosa with Shrimp from the "Back to her Roots" blog:
Can I just say, this was so, so yummy and easy! I'm not much of a cook, so if I can do it, anyone can. I added a wee bit of extra crushed red pepper to up the "hot n spicy" factor and it was amazing! Highly recommended.
On Saturday night we invited over two couples from our neighborhood and made SUSHI! I took a class at our Culinary Center in November to learn how to do it. We have a great Asian fish market here for buying the sushi-grade fish (be careful where you buy sushi fish, my friends). We did tuna and yellow tail, with tons of fresh veggies like enochi mushrooms, jalepeno, carrots, cucumber, red pepper, green onion. I went easy on the spicy mayo and rice, and did not use cream cheese in any of my rolls - success! The rolls were delicious and pretty healthy. For appetizers, we had edamame and shrimp with homeade cocktail sauce. Never made cocktail sauce before - I'm starting to feel like I'm getting the hang of this whole "cooking" thing :)
Last night I had Stir Fry on the menu so we did chicken, brown rice, and every veggie in the fridge. For reals. Red onion, garlic, squash, carrots, broccoli, mushrooms, red pepper...I just filled this dish up with veggies and it turned out amazing! And I made a whole bunch so my lunches are taken care of through Wednesday. Score.
Eating healthy is surprisingly fun :) What a great, relaxing weekend. It's so nice to start the week without guilt for all the "splurging" I usually end up doing on the weekend :)
