Wednesdays Suck. I had to work late, then to the gym, then home to shower and throw supper on the table. Eating so late seems to rob my evening away. So, I decided to make Chef Meg's Slow-Cooker Chicken Salsa for supper tonight. I figured I didnt have anything to lose. I must say that it was one of the tastiest quick suppers I have had in a looooong time. This is definetly a keeper... I may make it every Wednesday night! I had a nice big portion, over top of brown rice and it was less then 800 calories! Gotta love that! This one is a no-brainer.
