Easy & Healthy Lunch Idea: Fried Egg & Kale

Here's a bit of easy and healthy lunch tastiness I've put together in case you're looking for a change up:

Fried Egg & Kale

1. Using a non-stick pan or a pan lightly sprayed with oil, crack an egg and fry for a minute over medium-low heat.
2. Chop two kale leaves (with or without stems) and add to the pan.
3. Season to taste with salt and pepper.
4. Flip once. Feel free to let the yolk break and spread since it will pull some of the kale together.

It's all good. You get your protein, iron, vitamins A and C, calcium, and a healthy dose of fiber and antioxidants. Let me know what you think either here or on my blog:

    Thanks Troy and how timely, I just came back from the store with a package of pre-chopped kale! Now to try this new dish, sounds great! I've been using it in my soups and salads, but with eggs sounds delish emoticon

    Thanks for sharing! I like both ingredients but had never tried putting them together. I guess if egg and spinach work together why not kale too! I personally like more spices than pepper and salt, I use cumin or garlic salt on my eggs as well.
