Troy's Oatmeal Protein Powder Pancakes

Thursday, May 01, 2014

On the tasty heels of my "Fried Egg & Kale" posting yesterday, I thought I'd offer you my latest taste invention: TROY'S OATMEAL PROTEIN POWDER PANCAKES!! TA-DAHH!!

A light and tasty alternative to the traditional pancake. This will turn out very fluffy and is like a very different kind of omelette. I thoroughly enjoyed this healthy dose of breakfast "goodfullness"! Protein, low fat, fibre, then depending on your toppings you could pull in some great fruits for vitamins! It's all good.

Minutes to Prepare: 5
Minutes to Cook: 10
Number of Servings: 2

Perfect Whey Protein Powder Chocolate Peanut Butter, 35 gram(s)
Egg whites (1/4 cup = 2 egg whites), 2 serving
Egg, fresh, whole, raw, 1 large
Great Value One Minute Oats (1 Serving = 40g), 1 serving Flax Seed Meal (ground flax), 2 tbsp
Baking Powder, 1 tsp
Almond Breeze Almond Milk, Unsweetened Vanilla, 14 oz
Vanilla Extract, 1 tsp

Top with fresh fruit and stevia or another preferred sweetener as desired. Cinnamon also works well sprinkled on top. Substitute specific brands as needed. It's all good.

Combine dry ingredients. Separate egg yolk and egg white. Combine egg whites and beat until frothy. Add milk, egg yolk, and vanilla extract to egg whites and beat until mixed. Add wet ingredients to dry and mix. Fry on a non-stick pan or a pan lightly sprayed with oil.

Serving Size: Makes 2 servings.

Again this is very timely and looks great, I bought some chocolate protein powder a couple of weeks ago and other than in shakes I wasn't too sure what quite to do with it.
I've been trying to use whole wheat waffles from the store I work at with berries and low fat (syrup). But Troy now I've got this fantastic recipe to try - thank you again!!

P.S. The Egg n Kale was so tasty, I added some shredded cheese with the cayenne while it was coming together and now this is going to be a fav of mine for sure!

Hey Troy the Chef let us have more! emoticon emoticon
