Troy's Banana-Spelt Flour Pancake

Introduction:
A simple recipe for a different kind of pancake full of moisture and natural sweetness.

Minutes to Prepare: 5
Minutes to Cook: 8
Number of Servings: 1

Ingredients:
- Banana, fresh, 1 medium (7" to 7-7/8" long)
- Spelt Flour, organic, 0.25 cup
- Cinnamon, ground, 0.5 tsp
- Egg whites, 1/4 cup (2 egg whites)

Directions:
Mash peeled banana until combined. Add dry ingredients and mix well. Beat or whisk egg whites until frothy. Combine banana mixture with egg whites. Heat a small non-stick frying pan (or lightly spray with oil) on medium heat. Add full mixture and spread evenly. Heat for a few minutes on each side.

Tips:
The texture and flavour are somewhat similar to a moist banana bread. Enjoy this on its own or topped with your favourite nut butter (ie - peanut or almond butter). Top while the pancake is still warm so that it melts and spreads easily. Also try adding raisins or other dried fruit.

* EDIT (May 16, 2014): I've modified the recipe slightly. I've added beaten egg whites to make the pancake lighter and fluffier.

    Yum, sounds good...shucks I just had lunch, otherwise would've made pancakes!! (oh, right supper still awaits me! lol, pancakes are allowed for *any* meal , right :D) THanks for sharing.     I sometimes buy the sprouted spelt but the budget would not allow this month but I think this would work with whole wheat. I think I remember something about letting ti rest before making the pancakes- I think I read that in Rip Esselstyn's Engine 2. I'm going to have to go look! I made the spelt blueberry pancakes from that book.These look good.
    And anyway- I will make these and rate them. Most like on Sunday. emoticon
