It's been a busy baking/cooking day getting ready to have my older sister and her kids and grandkids over for Easter dinner. I must say it feels very strange to not have our kids and grandkids around this weekend but that is the downside of our having moved 6 hours away. Looking forward to their visits in the summer instead.
As I am vegan I always bake the vegan interpretation of holiday treats. Tonight I made hot cross buns, carrot cake and a mushroom seitan roast. The rest of the clan are having ham and lamb with all the fixings.
Good thing I worked hard at the gym today because I couldn't resist a hot cross bun when they came out of the oven! Very yummy. And the cake looks good also. Now just waiting on the roast to finish cooking. Then I am off to bed so that I can be up in time to go to church with my Mom.
