Vanilla No-Sugar Cookies (grain free)

1 c. almond flour
2 tbsp. arrowroot flour (or corn or potato starch)
pinch of sea salt
3 tbsp. butter, coconut oil, or other oil, melted
2 tbsp. honey
1 c. white sweet potato, peeled, cooled (or regular if you don’t mind the color)
2 tsp. vanilla
Preheat the oven to 350 degrees.
Mix the almond flour, arrowroot flour and sea salt together in a bowl. Make a well in the center and add the egg, oil, and honey. Combine.
Add the sweet potato and vanilla. Mix until dough is formed.
Roll or pat to ¼ inch. Use a cookie cutter to cut into shapes. Transfer to prepared baking sheet using a thin spatula.
Bake for 10-12 minutes until golden around edges. Remove from the oven and allow to cool for 10 minutes.
Remove the cookies to a wire rack and allow them to cool completely.
