For years I have added a can of tuna to my salad, (to give it the protein to make a complete meal.) then some grated cheese, (usually Parmesan but sometimes cheddar) Then I discovered freeze dried cheese so I switched to that exclusively. In addition to the protein, Freeze Dried provides the "crunch" factor so I don't need to add any croutons.
Then our Prime Minister and the US decided to start playing tariff wars and all dairy products were slapped with incredible tariffs and I can no longer get the items I like. Maybe I'm not looking in the right places, but I have not been able to find a source in Canada for freeze-dried cheeses.
So on to what I can get. There are several manufacturers who supply a fully grated (almost powdery) Parmesan. I found one brand that was acceptable - not as good as the FD, but would be ok - and was using that. Then all of a sudden, the store I bought it at seemed to no longer carry it!
I get an email every week about sales at Costco. This week, apparently Costo had a cheese extravaganza and, guess what? That brand of Parmesan was included and it was on sale! But I don't drive and it is too far for me to walk from a bus stop. My BIL has been busy in the evenings, and today he was busy with a work thing, but after he got home, he went to the closest Costco to get me some, only to find out they were completely out, there was nothing but a lot of empty shelf! It was too late (almost closing time) for him to try another location, so I am once again out of luck.
Maybe it's time for me to go back to the can of tuna, lol Or maybe stop making salads as a complete meal and start making them a side dish.
