This is a link to a blog posted by a Spark friend, NGCHILD. She has lost 80 pounds since June 15, 2020. I am intrigued by one sentence.

If you are lean, you can fast 3-5 days every 8-12 weeks.
If you are normal weight, you can fast 4-7 days every 6-8 weeks.
If you are overweight, you can fast 5-10 days every month.

Our new 25 pounds in 25 weeks challenge on the Intermittent Fasting Team starts tomorrow. It runs Dec 20, 2020 to Jun 6, 2021. I like these kind of challenges.

Ingredients
Salad
4 cups baby arugula
4 leaves radicchio sliced or torn
1 clementine peeled, cut in half crosswise, segments separated
1/2 cup cooked beets peeled, chopped
1 cup cherry tomatoes halved
1/2 cup red onions thinly sliced, soaked in cold water 15 minutes, drained
2 tablespoons pomegranate arils
1/4 cup basil leaves
3 medjool dates seeded, chopped
4 tablespoons macadamia nuts toasted, chopped

Dressing
2 tablespoons fresh lemon juice
1 tablespoon fresh orange juice
1 clove garlic crushed
1/2 teaspoon cinnamon
2 teaspoons fennel seeds toasted, lightly crushed
3 tablespoons extra virgin olive oil
salt and pepper to taste



Serves 6

Salad
2 cups (~1 large sweet potato) peeled and diced sweet potato
2 cups (~1/2 of 1 squash) peeled and diced butternut squash
2 cups (~1 large) thinly sliced red onion
fine sea salt and freshly cracked pepper
1 teaspoon Italian seasoning
1 tablespoon olive oil
4-6 ounces baby spinach

Croutons
1/2 loaf day-old French bread
3 tablespoons olive oil
3 tablespoons unsalted butter, melted
2 teaspoons mined garlic
1 teaspoon Italian seasoning

Dressing (this lemon one or see the notes for a balsamic dressing)
3 tablespoons lemon juice
1/4 cup + 1 tablespoon olive oil
1 and 1/2 tablespoons honey
1/2 tablespoon Dijon mustard
1 teaspoon EACH: Italian seasoning, minced garlic

Good way to use leftover roasted vegetables.

I think I would omit the homemade croutons.

Autumn Crunch Pasta Salad

5 ounces fresh spinach half a 10 ounce bag (6 cups; 140g)
1 and 1/2 cups (150g) dry small pasta
3/4 cup (87g) chopped celery
1 large Granny Smith Apple, thinly sliced or chopped
1 teaspoon lemon juice
1 can (15 oz; 425g) drained mandarin oranges (or 2 mandarin oranges)
3/4 cup (91g) dried cranberries
1/3 cup (41g) pecans, coarsely chopped (See Note 1)
Optional: Feta cheese

Dressing
2 tablespoons EACH: apple cider vinegar, white wine vinegar
2-4 tablespoons white sugar
1/8 teaspoon each: paprika & onion powder
1/4 cup olive oil
1/2 tablespoon poppyseeds
Fine sea salt and freshly cracked pepper


Swap out dried tart cherries for the dried cranberries
Use goat cheese instead of feta cheese
Swap out candied pecans for the toasted pecans

Unfortunately this Autumn Crunch Pasta Salad doesn’t sit or store well once dressed. The dressing will wilt the spinach, the apples begin to brown, and the pecans get soggy once dressed.
The salad can be made in advance as long as everything is stored separately and the apple is cut right before enjoying. Assemble and add the dressing right before eating.

Carbohydrates: 33.7g
Protein: 3.5g
Fat: 10.8g
Sodium: 24mg
Fiber: 3.3g
Sugar: 17.2g

Serves 6-8, so what size did she use to figure the nutrients?

It has pasta and fruit. It's higher in calories, sugar, and carbs.

Dried fruit contains more sugar than raw fruit. Sweet cherries or grapes are better for us than dried cherries.
I would dice the apple to make it easier to eat.

It appeals to me. Crunchy. Fresh and colorful. It could be scaled back to make one serving.
