MUST TRY THIS! I think this could seal the deal for hubby being vegan for life.
There are several Bacon Salts, but Hickory Bacon is the only one that's vegan.

I made the tempeh bacon from one of the Isa Chandra Moskowitz books last week (I think the brunch one) and it was really good. The recipe calls for oil in the marinade, but it can be eliminated. The other ingredients were tomato paste, liquid smoke, apple cider vinegar, maple syrup (you could probably also eliminate this, although I did not) and maybe something else that I can't remember. I used in in a BLT wrap.

I made a BLT last night with egg plant bacon!!! Hubby agrees, SO GOOD!

Here's the deal:

I used the Eggplant Bacon Recipe from my favorite cookbook, Appetite for Reduction:

Preheat oven to 425, line baking sheet with parchment paper. Cut a large eggplant in half lengthwise and slice thinly into half-moon shapes. I used "baby" egg plant, so I just sliced it into rounds. Spray lightly with cooking spray, season with some pepper.

Bake for 11 minutes, turning part way through.
Remove from oven, lower temp to 350.

Combine 1 tsp liquid smoke with 2 tbsp low sodium soy sauce. When egg plant is cool enough to handle, dip slices in soy sauce mix, coating thoroughly. Place back on the paper lined baking sheet and bake for another 3-5 minutes.

While the eggplant finishes cooking, I toasted my Dave's Killer Bread. I like the "Light" 21 grain, it is only 65 calories per slice! Perfect size of sandwich, I think! I used some Veganaise, sliced tomato, red onion, avocado, and lots of lettuce. SO BACONY!!!! YUM! My hubby approved it as SUPER good too, and he is a little bit picky.

I saw a recipe using the coconut "bacon" for a BLT recently. Looked really good. I may have to try this, too

YUM--I'd probably do beans too. Mash any kind (especially softer varieties) in the blender with garlic and cilantro or sprouts to make a hummus type spread (no oil, only lemon or broth). Kind of like in the Engine 2 book he makes sandwiches on toast, with hummus, thin sliced lemons, onions and cooked kale well drained.

I'd go with any type of beans...I love em all. I eat alot of black, garbanzo, and pinto beans though.

I was just thinking of BLT sandwiches today...and thought I can still have a BLT...just wouldn't be Bacon, Lettuce & Tomato...it would be

BEANS...lettuce & Tomato...which actually sounds kind of good to me!

It consists of large flake unsweetened dried coconut, tamari (or soy, or Braggs?), maple syrup (or other sweet syrup of choice), smoked salt and water. There are loads of BLT recipes posted or at least referred to with reverence. Seems like it's ETL friendly if we don't overdo. Maybe not during the 6-week start up. Mmm. I'm getting ideas for my garden tomatoes this summer. Oh boy! (planting Big Boys again!)
