Wow, good ideas. Chicken is the cook's 'tabula rasa'. Chicken is accepting of SO many spices, herbs, marinade's! Just look in your spice cabinet, wine rack, veggie bin, and put a nice smile on your face and Go for It! Make it fun! And Above all first cook for YourSelf!
And always, always remove the stroke causing skin before cooking. No use spoiling a great dinner with a visit to the cardiologist.

Hi Jennifer,
Try this one, I do this when I can't think of anything. Lay a bag of spinach in the bottom of 9x13 dish. Then lay 5-6 flattened chicken breasts. I red bell pepper sliced or use them in a jar. Next pour a jar of healthy good spaghetti sauce. Spurge and buy a good quality pasta sauce 7-9 dollar. I package of cheese (my recipe calls for a fontina but I usually use a light white cheese or whatever your family LIKES. Bake covered at 350 for about an hour or Bake 300 for 1 1/2 hours. There will be alot of sauce so make sure you serve spinach pasta or some sort on the side and or crusty bread. You can add fresh sautee'd mushrooms if your family likes mushrooms.

Another good one is to throw chicken breasts in a crockpot with 1/2 cup brown rice, 2 cans black beans (rinsed) and 1 jar salsa on low all day.

I grill 5-10 chicken breasts every Sunday and from that I'll have grilled chicken, then I'll turn some into chicken salad, chicken fatita's, and chicken soup, depending on my mood.

I usually only do chicken in something else, salads or soups. In this online recipe world, don't forget your local library. They usually have rows and rows of cookbooks, lots of them are for calorie restricted diets. I am older and accustomed to paper books, and I LOVE to read cookbooks! Every once in a great while you'll find one that has lots of recipes that you like, and those are the only ones worth buying.

hello, I am some need for new ideas for chicken. My family only eats chicken, fish, shrimp, and tuna. But I am running out of different ways to cook boneless, skinless chicken breast. We eat chicken at least 4 times a week. Any ideas? emoticon
