I have about 20 minutes for lunch, and no planning time (I teach a college class during my planning period), so I try to sneak food in throughout the day. Breakfast at my desk before the kids get there, a snack during class change. For lunch I usually bring a lean cuisine or left overs I can reheat. In a pinch, I keep low fat popcorn in my desk. It keeps me full, at least. I always have healthy snacks in my desk to keep me away from the vending machines, and I have a case of water under my desk at all times!

I always pack a salad, fruit, cheese stick and half a peanut butter (reduced fat) sandwich on reduced calorie bread. I have a diet coke or water or both to drink. I try to keep hummus or other things handy in case I forget my lunch at home.

With the number of students my colleague and I serve and level of need (self-contained EC), we cannot teach the whole group together. Last year, we gave each other 1 hour every other day by her teaching science and me teaching social studies. I come in early in the morning, stay a little later in the afternoon than I have to, and search for small snippets of time to plan and get things done. I try not to, but I do take things home and work on the weekends as well.

My few minutes when the kids are working on journals is my only downtime during the school day, except Mondays and Wednesdays when one of the high school teachers takes the kids for 20-30 minutes for a computer lesson.

I have arranged our schedule so that I don't go straight from teaching one class to teaching another. We have LA first thing in the morning, then go to PE, then math. We either have math centers or I take them to the library or cpu lab unless the art or music teacher comes to our room (once every 6 days each) After lunch and journals, we have writing center time (M/W CPU) and then I teach one group social studies while my colleague teaches the other group science. The end of the day allows time to pack up and have a read-aloud story until time to go home.

It isn't perfect, and it is very stressful, but we are making it work. Some days after school, I just want to sit at my desk and do nothing! Most days, it seems, there is a meeting or training, or other required event going on.

I like to pack a salad with chicken breast and some fruit. String cheese and a banana is a favorite mid-day snack as well.

I've had years where I had no breaks. This year I have from 8:30 to 9 free and sometimes about 20 min. at lunch, not always. I have k-5 so they don't all go to recess or fine arts at the same time.

Kim-Possible - How do you not have a planning time or duty free lunch?!? When do you get things done and how do you stay sane? My lunch may only be 20 mins long, but I love every second of those 20 mins. It gives me time to reset after reading and science and get mentally prepared for writing and math.

I have made a point to plan for time to eat, even though I don't have any planning time or other time without my students. They eat lunch in the classroom, so I take them to get their lunch and get them settled, then warm my lunch and eat with them. As they finish eating, they know they have to get their journals out to work on while I finish eating. They can ask for help with spelling a word, etc. while I eat, but it allows me to have a nice, quiet time to eat my lunch while they are writing.

I pack a big salad every day- spinach, 1/3 squash and zucchini, mushroom, cranberries, walnuts, with carrots, cucumbers, celery, broccoli, cauliflower, peppers on the side. I add either a couple of eggs or a piece of chicken or fish for protein and finish off with an apple or some grapes. Sometimes, I'll put the egg on half a pepper with some hummus, spinach and tomato or will slice the apple and put it on a sandwich thin with some almond butter. I always have my salad, and just change things up a little with the veggies and protein on the side.

Some weeks I'll make a big pot of beans, and bring beans and brown rice or quinoa and a vegetable. Other weeks, like this week, I'll bring half a cup of milk in a tupperware and a pack of oatmeal, and make myself some oatmeal. I'll also bring a greek yogurt. It's very filling!

left overs or a salad and a 32 oz H2O. I keep protein bars or almonds in my drawer at all times. I keep tuna kits in my drawer too in case I have an emergency failure to pack a lunch.

I feel like I never have time to eat during the school day! I generally just eat a protein bar and a sliced up apple. But on days where I know I can sit and eat during something like a team meeting, I'll bring 17 slices of turkey pepperoni, a mini babybel light, and either an apple or some carrots and radishes.

I also always pack some type of extra snack (an orange, some mini dill pickles, another protein bar) for after school since my lunch is at 10:50am and we don't leave school until 3pm. :) I'd be starving otherwise, and that might lead to some VERY bad decisions either at the grocery store or once I get home!

I've been making a big pot of pasta (spaghetti, baked mac n cheese, etc) on Monday nights and putting one serving into a bunch of pyrex bowls so I can just grab a serving in the morning and go. I usually take a fruit (sometimes two), yogurt or applesauce, and crackers of some kind (usually graham crackers, but I really love Ritz whole wheat).

I will also use leftovers, if I have any or a salad with tomatoes from my garden and a 1/2 oz of walnuts.
But my lunch box contains a morning snack with my calcium pills and vitamins, my lunch and an after school snack.
What might that be? Well I always take two or three different fruits, raw veggies which usually has broccoli or cauliflower, carrots and/or celery. I also usually take a lite yogurt and a crunchy peanut butter banana sandwich on Nature's own double fiber wheat bread.
I actually lived on fruits, yogurt and banana peanut-butter sandwiches for 2 of the 4 months Erik was in the hospital. Good thing I like them.

I also pack leftovers.

I also try to cook a healthy lunch on Sunday then portion it out for the weekend. I have things like turkey bean chili, turkey meatloaf, healthy lasagna. I actually look forward to lunch.

I am never satisfied with frozen dinners but will use them in a pinch.

I usually have fruit or yogurt with it.

I'm packing myself several choices of the fresh fruit that's in season right now....yum....a monster bottle of water, sometimes a small portion of leftovers or yogurt or a sandwich.
I'm also packing a juice box in case my energy level sinks at the end of the day to help tide me over until I get home!

I pack a spinach salad with lots of veggies- mini peppers, broccoli, cauliflower, baby carrots. Sometimes I have fruit with it, sometimes a piece of grilled chicken or steamed fish. I have also been known to cook an egg or two in the microwave to have with it.

I have 3 salad bowls that I can use, so I fix 3 salads on Sunday night and 3 more on Wednesday night. I have classes on Saturdays this semester, so I pack lunch for that too.

I usually pack a whole meal, which may be a salad with chicken or turkey and a piece of fruit or something. Today it was an apple and a piece of string cheese, some veggies and hummus. I only get about 15 min. to snarf something down this year. If kids show up I can nibble a little here and there.

Leftovers when we have any.... otherwise - yogurt, fruit cup, pudding cup, energy bar. Sometimes I go in spurts with salads - usually with sliced deli ham or tuna salad. When I've been making bread, I'll have a sandwich.

Today I just had a Clif Bar because I had 2 IEP meetings during my lunch time. Usually I have a salad with tuna salad or sliced chicken as the protein. I save my ounce of almonds for the ride home so that I am not too hungry when I arrive at home.

I too like to make sure there is some protein because it not only gives me some energy but it keeps me from getting hungry. I normally have a salad with tuna, or chicken, or turkey.

Today is a little different because I'm eating leftovers from lunch yesterday, but I usually pack my lunch in a Bento Box (I just like them - look online for more details) and have some type of protein (chicken, roast beef, turkey), hummus with pita bread or chips, fruit (I'm on a grapes kick right now), and a small salad. I also keep some nuts on hand at school to snack on. Good luck revving up your lunch!

My lunch consists of an apple, an ounce of almonds, a plum, cottage cheese, a cup of carrots and a cup of cherry tomatoes. Do you pack lots of little snacks like this or do you go for a real meal? What do you usually pack? My lunchbox needs a makeover.
