My goals are the same as yours, YELNOLYLUJ . Even though I have been living by myself for over 10 years, I still cook too much food. Cooking for 1 is a difficult thing for me. I use a lot of convenience foods because trying to eat healthy on a very limited budget is difficult.

I joined this challenge to learn to cook healthier food...

For me, I already meal plan and prepare healthy meals in my freezer that only need cooking. I don't prepare meals and cook then freeze I only prepare the parts that can be prepared for the week ahead and successfully frozen.

For me, I have to cook 3 separate meals nightly one for a husband who suffers IBS/SIBO and one for my son he eats differently again.

So when it comes to myself I usually just grab something healthy BUT easy even though I have a meal ready to cook.

The thought of cooking that meal for myself some nights after already preparing 2 other meals is not so inviting.

This does not happen every night but sometimes and this challenge will just keep me on track with it to make myself look after myself better not only look after my husband and son.

I meal plan on a Sunday and my kitchen has been made over not so long ago.

I read the article by Mike Kramer, Staff Writer; Where is Danger Lurking in Your Kitchen?. I agree with his sentence that to lose weight "... It really takes a lifestyle change of consistently picking up good habits and chucking old habits to the curb."

I think my biggest challenge is consuming all of the healthy food I buy and not letting it go to waste. Having accountability will help I think. I really need to lose weight, so that's definitely another goal. My daughter( a heart patient and stroke survivor) and I want to manage healthy meal planning better so we'll have more time for being active.

I hope to accomplish cooking more of my meals at home. I want to cook healthier meals. I want to cook at least 5 meals at home each week. I want to make over some of my own recipes so that they can be healthier and I want it to be an enjoyable experience.

My overall goal is to set up a recipe box of healthy, delicious, easy recipes to help get us out of the rut we're in! I have so many recipes that I know we love, but languish forgotten. It's a time consuming task. So far I have done about 3 recipe cards! My goal is to do at least one a day.

Past week I already clean and organized the pantry, refrigerator, and freezer. instead of label shelves I gave everyone there over cupboard and refrigerator space. for the last 20 I threw out the bad stuff and keep the good. I am even teaching my two teenager boys how to read the label and the ingredients on the food packages.
So this week I want to continue watching out for the carbs, and looking for healthy recipes that I can cook. I also want to induce grass-fed meat to my family slowly.

I went through my Spark People Recipe Book (one that I made with a binder, dividers, and recipes I've printed from the Recipes section of this website. I tried one tonight that I've not made before, even though I put it on SP. Unfortunately, I didn't have quite enough of the chicken it called for, so I had to do a "makeover" to get the nutrition correct. Then, I forgot about toasting the almonds to put on top, as well as having used pineapple juice (drained off the pineapple), instead of chicken broth. No wonder it didn't taste quite right. emoticon emoticon Oh well, I'll try it again soon.

Oh my! I am a food hoarder! I was trying to toss and such and discovered it makes me nervous to see empty space, and I went grocery shopping again! My goal for this week is to do all of the things on the week one checklist AND to only meal plan and "grocery shop" in my pantry and fridge/freezers until I have nothing left but the "normal" staples. Since I bought some "less than healthy" things, I will portion them out and save for higher calorie days / treats. I'm trying to run the gamut of my calorie allotment just like an interval workout. I read an article that said it's a good way to avoid your body getting too used to conserving fat and such when you're on a low/lower calorie diet.

My pantry is organized and my freezer and refrigerator are full of healthy foods. I didn't do as much meal planning as I should have, although I am making progress! I am sure that this challenge will help me with that. I feel that eating healthy, pre-planning my meals and eating healthier will help me a lot in the long run. Now onto week 2.

My goal for the first week of the challenge is to do a kitchen makeover and to plan my meals for the week. I am doing this because I am tired of wondering what to cook or eat for meals at the last minute. This way I will know and have the ingredients on hand, no more wondering. Also, I tend to eat a lot healthier when I preplan. This is one habit that I think will aid me on my weight loss journey and my healthier lifestyle.

I started Monday to plan for next week. My goal is to plan meals that are quick and easy to prepare, but still fairly healthy. I have a goal of one meatless meal per week at a minimum. My husband and I work long hours so we have limited time to prepare meals, so my other goal is to ensure we have leftovers that can be used for lunches. My kids eat too much junk, like frozen fries and chicken nuggets, or frozen pizzas, so I also want to encourage them to learn how to prepare healthy meals (they are 14 and 11).

I'm starting week 1 again. I want to plan my meals for a week starting on Sunday to help my weight loss challenges. I'm beginning to get less motivated and not losing as much. By doing this I can eliminate empty calories and/or look at my menus beforehand to get a birds-eye view of overall nutrition such as too much fat, sugar, not enough protein, etc. to make the food I eat more nutritious.

My first goal is to figure out...and stick...to meal planning.
My second goal is to go through my pantry and find things I need to get rid of and pack them up for a local food pantry. The rest of the opened stuff...like the white rice, for example, I'm trying to use up; I can't stand the thought of throwing it away/the wasted money. That's just an example. It won't take too long to do that.

I already prepare most every meal at home as it is (though breakfasts are usually a very simple affair for my kids, and we make lunches the night before), though we do go out once in a while (usually special days or if it's convenient because we are no where near home).

I would like to learn hints & tips to create healthy meals in less time! Stir fry is already a family favorite. I usually cut up the veggies myself but, to save time & energy, I have sometimes used the precut ones from the grocery!

I just had a (long overdue) knee replacement and started eating clean / whole30 about 2 weeks before surgery...I felt great and lost about 10 pounds before going in...hospital could not comply 100% but I did the best I could for the 3 days I was in hospital and now have resumed and am loving this new "diet". Looking for fresh, good clean recipe / meal ideas and any other helpful hints you all share! Have a great day everyone!

I used to enjoy cooking and baking so much and I miss that. My goals are to get back to cooking meals with the girls and to make them healthier meals! I'd also like to streamline things to be more efficient in the kitchen. I can see problems with this one though because I have an adult son and girlfriend who live at home who do not contribute to any kitchen cleaning at all AND my oldest daughter puts away dishes for me and does an atrocious job of it. We're working on it, but I'm so tired of having to look in every cupboard and drawer and check inside every pot/bowl/container to find where she's thrown lids and utensils.

I cook most nights, but life gets hectic with 4 kids in different activities and sometimes I slip and choose easier ways like pizza or fast food which does none of us any good. I need to plan my busy nights accordingly and either start dinner earlier or enlist one of the teens or my husband to chip in.
