I made this for a dessert today. July 4th is my husband's birthday. I haven't eaten it yet, but did sample the crust, filling and topping while cooking. The only thing I would change is to lighten up on the lemon juice in the topping. A little to lemony for my taste. I also added strawberries to the topping mixture. It is more purple than red and blue. Can't wait to eat it all together tonight!

Edited: I have to add that the pie crust was soldered to the pan. I did use cooking spray, so I'm not sure why it was stuck. We ate it (it was awesome!), but the pie was not pretty.

I used ricota cheese and italian cheese blend instead of cottage cheese, yellow squash instead of yellow pepper. My pasta sauce has mushroom and green pepper. I also used italian seasoning, oregano, onion powder and a little garlic salt. I cut my yellow squash and zucchini into 1/4 slices using mandolin on cheese grater so it was a mock lasagna noodle.
I will comment later this evening what I thought about this recipe after we eat it ! .

I think I want to rename this OMG Veggie Lasagna ...Yum-o-licious ! I could eat this every night ! Hubby liked it too !

Zucchini Pizza

I decided to make in the oven ....just zucchini, pizza sauce and a little cheese. I am skipping the pepperoni (because I dont want to go shopping. I think I may add some sauted mushroom on top of cheese. They are baking right now. Looks yummy ! If not I will be back to tell hehe

OK ate this for lunch with saute mushrooms on it (no butter was harmed in the making of saute only cooking spray oil and garlic salt) LOL DELICIOUS ! I will definately be making this again in summer when I have lots of big zucchini

ROASTED GARLIC BUTTER BRUSSEL SPROUTS

Fresh Brussel Sprouts cut in half, baked 20 min at 400. Then add 1 Tbsp butter, melt in micro and sprinkle garlic salt, then add brussel sprouts and mix before serving. YUM-a-licious !

These are really easy to make and you won't ever want frozen brussel sprouts again. If you have tried frozen and hated them, try brussel sprouts again with this recipe.

** Served with salmon and yellow rice.

I love the fresh fruits summer I found one by Chef Meg on the Spark cookbook on page 123. You stuff the fruit into the cucumber slice. Since this was a family get together I didn’t do all the fancy steps to the salad it called for cutting the cucumber and making it in to cup to hold the fruit to much work for me. and the people I was doing it for would not even notice all the effort that went in the salad.
It takes a lot of time to cut and dice the fruit but worth it. I will skip the mint next time .Not a fan of mint the dressing was O Kay but would forget next time not worth the expense of buying the vinegar just for this recipe.

I made the breaded baked eggplant. I liked it as an alternative to eggplant parmesan. I dipped the eggplant in milk instead of egg and added parmesan cheese into the dry mix. Will definitely make this again.

Chef Meg's veggie curry is great! About 150 calories per serving, the spices are easy adjustable to taste, and you can play with the quantities to fit your slow cooker. It calls for potatoes, and I substitute sweet potatoes for some of the regular potatoes, as well as substitute cauliflower for some of the potatoes. Good stuff.

You can't always get what you want, but if you try sometime, you just might find that you get what you need. -- Stones, claro

Baked Green Tomato Casserole

I made this recipe today because my green tomatoes needed to be used. I tweaked this recipe and added to Sparkpeople today. I like alot of onion but if you don't I recommend using less, maybe even about half. It was so yummy and alot less calories than traditional fried green tomatoes.

My daughter plays SIMS 3 and she told us she wished she could cook like her Sim. She is 10 years old and so after checking out the things Sims make my husband located a suitable recipe for Fruit Parfait and we modified it to keep it simple. I helped my daughter but she did most of the work including picking black raspberries outside and shopping for the vanilla pudding and strawberries.

The fruit parfait was delicious and filling and only 141 calories per serving !!! I have included the link to the recipe below if anyone would like to try it.

I realize that you could cut the calories further with sugar free products however we try to avoid aspartame and generally only subsitute if we can find items with sucralose (Splenda).
