Corned Beef and Pastrami
Tom's Test Kitchen Nov 15-2014
This corned beef turned out really good, soak it over night after brining for a less salty brisket.
Ingredients
1 5 lb. or so brisket (I like the point end, fattier, but you can use the flat end, too...)
BRINE...
1/2 gallon water
2 cups Kosher Salt
1 1/2 tsp. pink curing salt
1 Tbl. black pepper corns
1 tsp. mustard seeds
1 tsp. red pepper flakes
1/2 cup brown sugar
(Brine for 5 to 7 days on the frig, turning over daily)
To Make the corned beef into Pastrami...
****Dry the Brisket, oil and rub.
RUB
1/4 cup kosher salt
1/4 cup paprika (I prefer smoked sweet-your call)
3 Tbl. coriander seeds
3 Tbl. brown sugar
3 Tbl. very coarse= cracked black pepper
2 Tbl. mustard seeds.
Smoke until you get the smokiness you like !
