1 pound ground beef
4 ½ cups water
1 (16 ounce) can tomato sauce
1 (12 ounce) can tomato paste
2 (4 ounce) cans chopped green chilies
1 cup instant rice
1 tablespoon white sugar
2 teaspoons chili powder
2 teaspoons minced garlic
2 teaspoons dried oregano
2 teaspoons ground cumin
2 teaspoons salt

Directions
Step 1
Cook and stir ground beef in a large skillet over medium-high heat until the beef is crumbly and completely browned, 7 to 10 minutes. Stir water, tomato sauce, tomato paste, green chilies, instant rice, sugar, chili powder, garlic, oregano, cumin, and salt together with the cooked ground beef.

Step 2
Reduce heat to low, place a cover on the skillet, and cook mixture at a simmer until the flavors have blended and the beef is very tender, about 40 minutes.

cooking spray
2 (8 ounce) packages refrigerated crescent roll dough (such as Pillsbury® Recipe Creations®), divided
2 lemons, zested and juiced, divided
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
2 tablespoons butter, melted
3 tablespoons white sugar

Directions

Instructions

Step 1
Preheat oven to 350 degrees F (175 degrees C). Line the bottom of a 9x13-inch baking dish with aluminum foil and spray with cooking spray.

Step 2
Press 1 can crescent roll dough into the bottom of the prepared baking dish, stretching to the edges.

Step 3
Mix the zest of 1 1/2 lemons and juice from 2 lemons together in a bowl. Beat cream cheese and 1/2 cup sugar into lemon zest mixture using an electric mixer until smooth and creamy; spread over crescent roll dough layer.

Step 4
Unroll the second can of crescent roll dough and layer over cream cheese mixture, gently stretching dough to the edges. Brush melted butter over crescent roll dough layer. Mix remaining lemon zest and 3 tablespoons sugar together in a bowl; sprinkle over butter.

Step 5
Bake in the preheated oven until top is golden brown, about 30 minutes. Allow to cool for about 20 minutes. Lift dessert from baking dish using foil; transfer to a cutting board. Cut into squares, leaving on foil. Return dessert to the baking dish and refrigerate until chilled, at least 1 hour.

Ingredients
4 plum tomatoes
2 slices slices Swiss cheese, quartered
4 slices cooked bacon strips, halved
4 slices deli turkey
4 Bibb lettuce leaves
1/2 medium ripe avocado, peeled and cut into 8 slices
Cracked pepper

Directions
Cut four crosswise slices in each tomato, leaving them intact at the bottom. Fill each slice with cheese, bacon, turkey, lettuce and avocado. Sprinkle with pepper.

@JTWINS98--glad you liked the recipe. And recommitting is good! Reevaluating goals and your overall plan periodically is a good way to make sure things are working and identifying anything that isn't working.

Just found a few more yummy breakfast ideas, including another breakfast cookie. Ok--I may be fixating on cookies--but if I can eat one for breakfast and not feel guilty, I'm happy!

Oatmeal Chocolate Chip Breakfast Cookies

Ingredients

2 medium ripe Bananas, mashed
1 cup of uncooked Quick Oats (certified gluten-free if necessary)
1/4 cup Chocolate Chips (certified gluten-free if necessary)
Directions

Preheat oven to 350°F. Spray a non-stick cookie sheet with cooking spray or use a non-stick silicone baking sheet.

Combine the mashed bananas and oats in a bowl. Fold in the chocolate chips and place a tablespoon of each on the cookie sheet.

Bake for 15 minutes. Cool and enjoy!

I came across this recipe today for "breakfast cookies". Of course, I only saw the word cookie..then when I read it again, I saw the word breakfast.

Surprisingly these are healthy cookies. Lots of fiber and hopefully flavor!

I am a fan of Ellie Krieger and her recipes. She does wonderful recipe make-overs to make our favorites, lighter and healthier.

Her cookies are worth a try, I'm sure. I'm posting the recipe and the link to the video:

Ingredients
3/4 cup whole-wheat pastry flour
1/2 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
2 tablespoons unsalted butter
1/4 cup canola oil
1/4 cup dark brown sugar
3 tablespoons granulated sugar
1 egg
1/4 cup (1 small jar) strained carrot baby food
1 teaspoon vanilla extract
1/2 cup rolled oats
1/2 cup bran cereal flakes
1/3 cup raisins
1/3 cup walnut pieces, lightly toasted in a dry skillet for 2 minutes, until fragrant and chopped


Directions

Place rack in center of oven and preheat oven to 350 degrees F.

Whisk together flours, baking soda, cinnamon, nutmeg and salt in a medium-sized bowl. Combine butter, oil and sugars in the bowl of a stand mixer and mix on high speed, scraping down sides if necessary, until sugars have dissolved and mixture is light in color, about 1 minute. Add egg, carrot puree and vanilla and beat an additional 30 seconds. Add flour mixture and beat an additional 30 seconds. Add oats, flakes, raisins and walnuts and mix over low speed just until incorporated. Dough will be slightly sticky and less cohesive than traditional cookie dough. Line a large cookie sheet with parchment paper. Using between 3 to 4 tablespoons of batter, form a ball and place on cookie sheet. Repeat with remaining batter, leaving about 3 inches between cookies. Wet hands and use palm of hand to flatten cookies until about 1/4-inch thick. Bake for 12 minutes, until cookies are fragrant but still soft. Let cookies cool slightly, then transfer to a wire rack to cool completely.
