Whole wheat sourdough toast (2 small pieces) w/ a little butter, one fried egg, two slices of smart bacon and 2 cups of coffee with almond milk and stevia. High in protein and filling, but no fruits or veggies. I'm working on it. I tend to like protein and carbs in the morning and a snack of fruit mid-morning. I also did some yoga before before breakfast.

Hubby and I are both music teachers and had our winter concerts this week. It was a busy, stress filled week! We made it through and treated ourselves to homemade pancakes for breakfast to celebrate. They were well earned and mighty tasty :)

Cascadian Farms Multigrain Squares for me today! Not much food in our house. We've been SUPER busy. Hubby and I are both music teachers in different school systems and both brought groups of students to a district festival this weekend. Tonight we have a community concert. Oatmeal with raisins and hot water with apple cider vinegar for me this week! I'm tired this week. Downright exhausted. I'm so appreciative that hubby has had breakfast ready for me by the time I'm out of the shower. I'm one lucky lady.

I had a homemade vegan pumpkin doughnut that my hubby made for me! YUMMY! Melted in my mouth. It's my birthday, so I get a treat! He makes me doughnuts instead of a cake!

If it helps, I prepare Bob's thick cut oatmeal by microwaving 1/3 cup of water to boiling then add the oats to it. go do something else for about 5 minutes, and it will be ready. that simple. I like to use a serrated knife to stir in 1/2 banana then top it off with whatever yogurt I have.

Had Chia Seed Breakfast Pudding

1/4 c dry oatmeal
1/4 c chia seed
1 c of dairy-free milk (I like to use almond/cashew or almond/coconut blends)
let it sit for 10 minutes
Add in a sliced banana and 1-2 TBSP of Raisins or currants

I get a huge blast of Omega 3s from this breakfast.

I almost always have rolled oats-not cooked-with 1 Tbsp flaxseed meal, heritage flakes or ezekiel nuggets, banana and soymilk. yum!

I first have peanut butter with a banana or Vanilla greek yogurt with a banana.
Then when DH gets up I usually make oat meal with flax seed and coconut oil.

I almost always eat the instant apple cinnamon oatmeal by Quaker Oats.

I'd like to transition to homemade, to eliminate the processed version, but haven't yet tried it. Finally bought all the ingredients yesterday, including true (Ceylon) cinnamon. Not sure I'm going to like the real cinnamon as well as the cheap stuff that we all think of as cinnamon, but I'll try it first. If I don't like it, I'll just have to try again. :)

With these ingredients, is this recipe vegan? I'm pretty new to this and I think I'm not sure of the rules. =/

1 cup dry Oatmeal (plain)
1 tsp Pumpkin Pie spice
1 tsp Cinnamon, ground
2 Tbsp cup Pumpkin, Canned, Festal
4 tsp Organic Sucanat
4 oz Almond Breeze Almond Milk, Unsweetened Original

1 Cup of Fage 2% Greek Yogurt (5g fat)
1 Dr. Krakkers Flatbread (1 serving of carbohydrate, 15g)
1/2 chocolate chia seed pudding (2 tbsp chia seeds, 1 tbsp sugar free cocoa powder, 1/2 milk or almond milk, 1-2 tsp cinnamon)
1/2 banana (1 serving of carbohydrates)

This ended up being around 500 calories, but it's nutritious and will tide me over until 12, since I arose at 5AM.

Oatmeal with wheat bran, flax meal, cinnamon and blackstrap molasses. The last 2 days before that I had smoothies. Bananas, mangos, blueberries, kale, spinach, water and wheatgrass. emoticon

Spinach frittata and whole wheat toast (1 large free range egg, 2 egg whites, 1 tablespoon ground flax meal, sauté spinach first, mix eggs with ice water, add flax meal and add to spinach when it reaches the softness you desire). Serve on one slice of warm toast. Occasionally I splash some chili sauce on it ...if I need spice in the morning!

It's not too late. I will find out who I am and try to be true to myself.

Steel cut oats with chia seeds, blueberries, cinnamon and a touch of pure maple syrup. Yum!

Tip: the night before boil 4 cups of water, add 1 cup of steel cut oats, simmer for 1 minute, turn off the stove, cover and leave until morning. Just warm them up and mix in your toppings!

I usually have grapenuts, almond milk, and a banana. But other favorites are peanut butter toast, bean empanadas, or tofu scramble.

Tofu scramble recipe, individual serving:
1/4 of a 8-oz pkg Tofu, drained and crumbled
1 tsp oil (or spray of nonstick spray)
1/4 cup diced onion*
1/4 cup diced green pepper*
1/2 cup cherry tomatoes, quartered
1/2 cup frozen mango chunks

Optional : soy sauce or hoisin sauce or sazon goya or your favorite salsa

Heat pan, add oil or nonstick spray. Add onions and peppers, saute until onions are translucent and peppers are soft. Add mango chunks, saute until thawed. Add tomatoes, toss lightly and add tofu. Saute a few moments to warm tofu. Add optional sauces/spices, if desired.

Serve hot, with toast or tortillas.

* I buy a package of frozen diced onions and peppers to make things extra easy.
