THis is a long one and I use 8 slices of the Sara Lee low cal bread 90 cals for 2 slices)

Basic Ingredients for Muffins or Cakes

4 medium eggs
4 slices bread (if using thin low calorie bread use 8 slices)
1 1/3 C non fat dry milk powder
1 tsp baking powder
1 tsp vanilla
Sweetner or brown sugar twin or sweet N low to = 8 T sugar (or to taste)

A. Apple or applesauce
4 medium cooking apples, grated or
2 C unsweetened applesauce
1 tsp apple pie spice and 1 tsp cinnamon

B. Pineapple Cake
2 C crushed pineapple (in own juice)
2 tsp cinnamon

C. Blueberry Cake
2 C blueberries (fresh, canned or frozen-unsweetened)
2 tsp cinnamon

D. Cranberry Cake
4 C cranberries (fresh, canned or frozen-unsweetened), sweetner to = 2 T sugar
1 tsp cinnamon and ½ tsp allspice

E. Carrot Cake
2 medium carrots (grated)
1 C crushed pineapple, in own juice
2 tsp cinnamon

F. Pumpkin Bread
8 oz cooked pumpkin
1 tsp cinnamon, 2 tsp pumpkin spice, sweetner to = ½ C sugar

G. Zucchini Bread
2 C grated fresh zucchini
1 tsp cinnamon, ¼ tsp nutmeg, ¼ tsp cloves

H. Banana Bread
2 whole bananas
2 tsp cinnamon

I. Mixed Bread
1 banana, 1 C applesauce, 1 grated carrot, some chopped nuts
1 tsp cinnamon, ¼ tsp nutmeg, ¼ tsp cloves

Step 1: Place bread in blender and make crumbs, add dry milk, baking powder and sweenter.
Step 2: Blend eggs and vanilla in blender until fluffy.
Step 3: Fold egg mixture into bowl with bread mixture and add one of the fruit or vegetable
mixtures listed above.
Step 4: Bake in square muffin tin, non stick loaf or bundt pan (spray pan if not nonstick) at 350 for 30-45 minutes or until
toothpick comes out clean.

Use ¼ of baked item for breakfast= 1 bread, 1 protein, 1 fruit
Makes 12 muffins for about 30 minutes If making cookies bake for approximately 8 minutes at 325

Have fun and enjoy varying this recipe. I usually make 12 muffins and freeze them in bags of 3 for easy ready made breakfast portions.

I use low carb Mission tortillas and/or HEB low carb tortillas. Honestly, you don't really know they are low carb. So here's some recipes, comfort food, made low carb by using this type of tortilla.

I also put these in a flat bowl with olive oil, cut them in the triangle pieces, like pizza, add some salt or spices and bake them in the oven for about 15 minutes. Then you have chips for eating dips, etc.!

I'm sharing Joe's prep for various meats. Joe is a really good cook and I follow his advice a lot!

JOE’S MARINADE

¼ cup olive oil
¼ cup wine (white for fowl, red for beef)
2 tablespoons teriyaki. (I add a tablespoon of Worcestershire sauce for steak)
1 tablespoon Montreal Steak seasoning ( or any seasoning you like. Cajun seasoning is good on chicken)

Mix ingredients in casserole dish. Coat meat with marinade by swishing it around in the dish. Sprinkle seasoning over meat. Flip after 3-4 hours. Sprinkle with seasoning. I generally marinate meat for 6-8 hours.


JOE’S BRINE

1/4 cup sea salt
1/4 cup brown sugar or molasses
1 heaping tablespoon of minced garlic
about 1/2-1 teaspoon of peppercorns

I use this on all my chicken now before I grill it or oven roast it. Makes a difference.

Pork Chop Brine:
Dissolve in one gallon resealable freezer bag:
2 cups hot water
1/2 cup kosher salt
1/2 cup brown sugar
Add:
6 cups ice water

Chocolate fat bomb or candy bar

chocolate bar 2 servings

2 bars unsalted butter
1 bar unsweetened baker's chocolate
1/4 C HWC
3/4 C of sweetener of choice powdered
1 tsp vanilla extract
1 pinch salt

melt butter in microwave in safe dish for 60-90 sec, add HWC and chocolate broken up. Stir until melted, melting another 30 sec in micro if needed. Once melted smooth, add sweetener, HWC and stir. Add vanilla and salt, stir. pour into candy bar mini muffin molds and refidgerate until firm. Makes 24 at 1.2 carbs each. May add 2Oz nuts which makes them approx 1.6 carbs each

Reposting some fat bombs I've made and enjoyed. Sometimes I put these in ice cube trays. When frozen I remove them and put them in a zip lock bag or a container and keep them in the freezer. Easy to take one out after a meal and satisfy that "where's my dessert" urge. I also put them in small cups I might use for pudding and keep them in the fridge for a week or so as eat them.

PEANUT BUTTER CHOCOLATE FAT BOMBS

Ingredients
1. 1/2 Cup Coconut Oil
2. 1/2 Cup Peanut Butter
3. 2~3 TBSP Unsweetened Cocoa Powder
4. 2~4 TBSP Stevia
5. Splash of Vanilla Extract (Optional)
Instructions
1. In a saucepan on low heat melt the coconut oil.
2. Add in the peanut butter.
3. Stir in Cocoa powder.
4. Stir in the stevia powder.
5. Remove from the heat and add the vanilla extract.
6. Pour into molds, ice cube tray or a muffin tin.
7. Freeze for 30 minutes to set them
8. Remove from molds and place in freezer baggies to store.

These are delicious! I used crunch peanut butter which really made these a treat.
I used 4 tablespoons of sweetener, half Swerve and half Erythritol. That's what I had at the time.
I used Ghiradeli 100% cacao unsweetened chocolate because I didn't have any cocoa. I used little less than an ounce of that.

I suggest you taste it while still a liquid in the pot to see if the sweetness suits you as you can add more if needed.

I poured this into an ordinary plastic ice cube tray, put it in the freezer for 20 min. or so then released the chocolate "cubes" into a zip lock bag to keep frozen until ready to eat.


STRAWBERRY FAT BOMBS

4oz cream cheese,
3 oz butter,
1 TBSP of vanilla
1/4 cup strawberries.
liquid stevia to taste.
Mix and freeze 2 hours
12 servings
1 carb each.



Cheesecake Keto Fat Bombs

Servings 18 servings
Ingredients
• 6 oz wt. cream cheese (note that each standard brick is 8 oz wt.)
• • 2 - 2.5 oz wt. strawberries or raspberries (can be fresh or frozen)
• • 2 oz wt. salted butter (4 tbsp)
• • 1 oz wt. granular swerve sweetener (roughly 2 tbsp)
• 1 tsp vanilla extract
Instructions
1. Let the cream cheese, strawberries, and butter sit at room temperature for about an hour to soften before continuing with the recipe.
2. Puree the strawberries using a small blender like the Nutribullet. Alternatively, you can mash them by hand, but the texture will be less smooth.
3. In a bowl, combine pureed strawberries, sweetener, and vanilla, stirring until well-mixed.
4. In a separate bowl, microwave the cream cheese for 10 seconds until very soft and pliable. This is an optional step, but it makes the cream cheese softer and more easily combined with other ingredients.
5. Add butter and cream cheese to the bowl with the strawberry mixture. Use an electric hand mixer and beat until well-mixed, ideally without any large cream cheese clumps remaining.
6. Divide the batter into 18 round silicone molds, smoothing the surface with a spatula. Freeze until solid, about 2 hours, before serving. Store leftovers in the freezer.

I hear that, Tish! That's why I made mine yesterday!

Both of these dishes are so easy to make. Some people do not coat the beef or even sear it, just put it in the slow cooker. I just always make mine with some sort of flour coating and then browning a bit in the skillet first.

LOW CARB BEEF BOURGUIGNON

2 cups thinly sliced onion
4 cloves garlic, sliced
2 lbs lean beef – I used London Broil, cut into small cubes
Almond flour to coat beef
¾ lb to 1 lb Baby Bella mushrooms sliced
1 tsp dried oregano
2 bay leaves (I never seem to use these)
14 oz beef or chicken broth or stock (I used chicken stock.)
1 cup dry red wine (Merlot or some dark red not sweet)

Place the onions and garlic in the bottom of the slow cooker.
Dredge the beef cubes in the almond flour and lay on top of the onions. (Sprinkle with salt and pepper before coating with almond flour.
Scatter the mushrooms, oregano and bay leaves on top.
Pour broth and red wine over the beef.
Cook on high for 6 hrs or low for 10 hrs.

Very hearty and tasty. Great for a cold weather day!

Pumpkin Fudge Recipe
Ingredients
• 1 cup pumpkin puree
• 2/3 cup coconut butter
• 1/2 tsp SweetLeaf Stevia Drops (I used 5 tblspns Erythritol)
• 2 tablespoons coconut flour
• 1 tablespoon coconut oil
• 1 teaspoon vanilla extract
• 1 teaspoon cinnamon
• 1/2 teaspoon ground ginger
• 1/4 teaspoon nutmeg
• 1/8 teaspoon ground cloves
• dash sea salt
Instructions
1. Stir all ingredients in small pot over medium low heat until well combined.
2. Line small container (I used an 8x5) with parchment paper
3. Spread mixture into lined container.
4. Chill in refrigerator until set.
5. Cut into squares. Keep stored in refrigerator.

Low Carb Keto Lemon Blueberry Zucchini Bread Recipe
Ingredients
Blueberry Zucchini Bread
• 1/2 cup Butter (softened)
• 3/4 cup Erythritol (or any granulated sweetener of choice)
• 3 large Egg
• 1 tbsp Lemon juice
• 1 tbsp Lemon zest (optional)
• 1 tsp Vanilla extract
• 2 cup Blanched almond flour
• 2 tsp Gluten-free baking powder
• 1/4 tsp Sea salt
• 1 1/2 cup Zucchini (grated - see note*)
• 1 cup Blueberries
Lemon Glaze
• 1/4 cup Erythritol (powdered in a food processor; or use any other powdered or liquid sweetener of choice)
• 4 tsp Lemon juice
Instructions
1. Preheat the oven to 325 degrees F (163 degrees C). Line a 9x5 in (23x13 cm) loaf pan with parchment paper. (You can use foil, but grease well.)
2. In a large bowl, beat together the butter and erythritol, until fluffy.
3. Beat in the eggs, lemon juice, lemon zest (if using), and vanilla extract.
4. Beat in the almond flour, baking powder, and sea salt.
5. Wrap the grated zucchini in cheesecloth or several layers of sturdy paper towels. Squeeze over the sink to release as much moisture as possible. Stir in the grated zucchini. Fold the blueberries into the batter.
6. Transfer the batter to the prepared pan. Bake for 60-70 minutes. Cool in the pan.
7. To make the glaze, run the sweetener through a blender to make it powdered. (Alternatively, you can use a powdered sweetener directly, like Erythritol Confectioner's or Sukrin Melis.) Whisk together the lemon juice and powdered sweetener. Drizzle the glaze over the bread.
Recipe Notes
*Grate the zucchini first and set over the sink to drain while preparing other ingredients.
Serving size: 1 1/2"-thick slice

I tried these and made a few changes.I didn't have brown sugar so just used the sweetner I had on hand. Use whole milk watered down Added some walnut pieces cut fine. I just faked my own icing and it was way to sweet. They were a bit dry so I think next time I will use some of the butter in the dough and some of it melted and put on top before baking.

Carbquik Recipe: Quick Cinnamon Rolls

Ingredients:
Cinnamon Rolls:

1 2/3 cup Carbquik
1 Tbls Splenda
1/2 cup low-carb milk (or 1/4 cup cream and 1/4 cup water)
1/2 cup softened butter
1/4 cup brown sugar substitute
3 teaspoons cinnamon
1/2 cup nuts (Optional)

Icing:

1/4 block of cream cheese
1/3 cup UNSALTED Butter
3/4 cup Splenda
1 teaspoon vanilla


Instructions:
Cinnamon Rolls:

In a bowl combine Carbquik, 1 Tbls Splenda and milk until moist. Let it sit for a minute. Stir again until well combined. Sprinkle some Carbquik on a kneading surface and turn dough onto surface.
Knead for approx. 3-4 minutes. Add more carbquik if necessary to keep dough from sticking.
Roll into a rectangle shape. (It helped me to roll only in one direction instead of back and forth.)
Spread butter over entire rectangle, then sprinkle with cinnamon and brown sugar substitute.
Roll up lengthwise and slice into 6-8 rolls.
Bake at 400 degreees for 20 minutes. Spread icing over top and serve warm!

Icing:
Whip on high speed for 2 minutes

This is a low carb mug biscuit. Link at bottom.
This tasted really good. I put it in my toaster oven brown the top and little and give it some crunch. Sliced it and spread butter on it. Totally worth the extra few minutes. Next I think I'll put this mixture into my Chaffle iron and see how it works!

3 Minute Low Carb Biscuits

Ingredients:

• 1 tbsp Butter
• • 2 tbsp Coconut flour
• • 1 large Egg
• • 1 tbsp Heavy Whipping Cream
• • 2 tbsp Water
• • 1/4 cup Cheddar Cheese
• • 1/8 tsp garlic powder
• • 1/8 tsp Onion powder
• • 1/8 tsp Dried Parsley
• • 1/8 tsp Pink Himalayan Salt
• • 1/8 tsp black pepper
• • 1/4 tsp Baking powder

Instructions:
1. Melt butter in a coffee mug by microwaving for 20 seconds.
2. Add coconut flour, baking powder, and seasonings. Mix to incorporate with a fork.
3. Add egg, water, cheese and heavy whipping cream. Mix until combined.
4. Microwave for 3 minutes. Immediately remove from mug and allow to cool for 2 minutes.
5. Slice and enjoy.

I used to make chocolate fat bombs but I found this ice cream that is Keto friendly, definitely low carb friendly. I love it.


I took some Mission Low Carb Tortillas, poured some olive oil in a wide flat bowl, soaked the tortillas in the olive oil, one at a time, covering both sides. Stacked them, cut them into 8 wedges, spread them on a cookie sheet, sprinkled with sea salt and put them in a 350 degree oven for 8 minutes. Beautiful, crunchy chips to eat with my guacamole! I'll never buy packaged chips again!

Churro Chaffle
2/3 cup almond flour

almond milk
Let sit for 10 minutes before cooking.

Strawberry Chaffle
5 eggs
8 oz cream cheese
1 pkg sugar from* strawberry Jell-o mix *I think this should be sugar-free*
4 Tbsp coconut flour
Let sit for 5 minutes before cooking


Cheddar Chaffle
1 egg, room temp
1/4 cup cheddar
1 Tbsp almond flour
1 tsp heavy cream
onion powder and garlic powder to taste, sprinkled on

McGriddle Chaffle
1 egg
2 Tbsp cream cheese
1 tsp vanilla
2 tsp sugar-free maple syrup
1 Tbsp mozzarella

I did not taste the mayo in the bread/ waffle I made below.

This is my newest obsession. So very yummy ! It is from www.ketoconnect.net

Low Carb Pumpkin Bread

Prep Time 15 minutes

Cook Time 1 hour 10 minutes

Resting Time 1 hour 30 minutes

Total Time 2 hours 55 minutes


Servings 10

Calories 285kcal


Ingredients


Cheesecake Layer
•8 oz cream cheese, room temperature
•1/4 cup sour cream
•1 large egg
•10 drops liquid stevia
•1/4 cup erythritol


Bread
•3/4 cup almond flour
•1/3 cup coconut flour
•1 tsp pumpkin pie spice
•1/2 tsp baking powder
•1/2 tsp Pink Himalayan Salt
•1 cup pumpkin puree (100%)
•1/2 cup erythritol
•20 drops liquid stevia
•2/3 cup butter
•1 tsp vanilla extract
•1 large egg




Instructions


Cheesecake Layer


1.Position an oven rack in the bottom third of the oven and preheat the oven to 325 degrees F.



2.Combine the cream cheese, erythritol, sour cream and egg in a large bowl and beat with a mixer until well combined; set aside.




Pumpkin Bread


1.Generously spray a 9-by-5-inch loaf pan with nonstick coconut spray.



2.Whisk together the flours, pumpkin spice, baking powder, salt in a medium bowl and set aside.



3.Whisk together the pumpkin puree and erythritol in a large bowl, then whisk in the melted butter, stevia, vanilla and egg.



4.Whisk in the flour mixture until just combined.



5.Reserve 1 cup of the pumpkin batter. Spread the remaining batter in the bottom of the prepared loaf pan.



6.Spoon the cream cheese mixture over the pumpkin batter, then put the reserved cup of pumpkin batter on top of the cheesecake layer.



7.Bake until the top is cracked and a cake tester inserted in the center comes out clean, 70-80 minutes. Cool on a wire rack for 20-30 minutes until cheesecake layer is set, then carefully invert onto a platter or cake stand and flip upright.



8.Let cool completely, at least 1 1/2 hours.



9.NOTE: Make sure to check on the bread starting at 60 minutes to make sure any cheesecake layer the settled at the top isn't burning. Slightly browned is fine!

Wonder bread Chaffle

Nothing is as good as real bread but this comes close! It makes a wonderful bun or a sandwich.

1 egg
1 Tbsp mayonaise
1 Tbsp almond flour
1/8 tsp baking powder
1 tsp water

Mix all together. You can whip by hand but if you blend it in a personal blender they have a fluffier consistency.

After mixing cook in a waffle iron.
This was good but a tad eggy in taste so I may try egg whites next time.

Basic plain chaffle, low carb.

1 egg
1 tbs. Carb Quick
1/2 cup mozarella

Mix well. Put half on mini waffle maker at a time. (pre-heated) Cook 5 minutes.

This makes a plain waffle or sandwich bread. Add butter, syrup, whatever. It's good!

This video shows the recipe for the Carb Quick Chaffle at the 5 min 40 seconds mark. He says 1 tbs Carb Quick has less than 1 net carb.

We use the Sara Lee 45 calorie per slice whole wheat bread and also the whole wheat 80 calorie buns and we like them even Frank

I go by the name of PJ and live north of KC, MO. Winter in East Texas.

Its always too soon to quit.

They sell gluten free bread and low carb bread here and they are both horrible. So I know exactly what you mean. It is expensive and not very good. I have a limit of a maximum of 125gms of net carbs a day and try to not go over that. I can eat really well on that. I try to get enough protein in, which I sometimes struggle with, and stay in the 1200-1400 calorie range which is a struggle for me. The fat calories can fall where they may. I need the fat for taste. I have tried open face sandwiches. I hope the pancake factory works. We have a lot of small appliances like that but never use them.

Still researching but will def let you know how it goes. I have tried some of that "low carb" bread but did not like the taste. I don't eat bread very often, but it's nice to have a hand held sandwich upon occasion so this may or may not be suitable. Time will tell....

Like you, I don't really count fat although it is def higher in calories per gram than either carbs or protein. So I try not to go overboard there, just not compulsive about counting them.

One recipe supposedly makes 2 chaffles, so using only 1 maybe would be ok for an "open face sandwich"

I have a little gizmo called "pancake factory" I was thinking this morning that I might try it, except it has a slight bowl on one side so the pancakes come out flat on once said and nice and "fluffy" on the other. Not sure how suitable it will be but won't know until I try it.

As a nurse I used to counsel patients on Atkins so I am also very interested in Keto low carb recipes like this. Personally I would like a bread substitute occasionally but I have to watch calories as well as carbs. I don't worry about fat content at all, just calories and carbs. It doesn't seem like an egg and some mozzarella cheese would be that many calories but a half cup of cheese is 2 servings. I wonder if the variations are lower in calories. I can't do a lot of exercise plus I don't get a lot of daily calories if I want to lose weight and keep it off so some of my meals are the equivalent of less than one chaffle. LOL. A sandwich where the bread alone would be 516 calories without the meat would be too much for me. They make commercial hamburger buns that are only 80 calories. I have not made cloud bread and wonder about the calories in it too. Please share some of the other variations if you like them. I'm sure other people will enjoy them too.

Chaffles are a Keto staple -- used in place of bread. They can be adjusted to make more stable and hold up well for sandwiches such as burgers, etc. They can be sweet or savory (like tacos or pizza) The basic chaffle recipe is just one egg and a mozzarella cheese - between 1/3 and 1/2 cup, adding various seasonings, or some almond, arrowroot or coconut flours. Usually cooked in a waffle iron because there is more surface to heat so they are sturdier. Ones cooked on a griddle are softer and could replace dinner rolls if one wanted...... I am sure using lower fat cheeses would bring the calories down considerably, but I think Keto is more concerned with low carb more than low fat.

I am interested in them as a bread replacement for sandwiches. How can you tell I've been watching a LOT of videos, lol I have seen some interesting variations.

I don't know who originated the idea, but I like that it is low carb.

258 calories for a taco shell would be a lot but they are probably more filling than regular ones and maybe you would only need one taco. I wonder if they get the idea from fast food waffle sandwiches.

Wow, Karen. That recipe looks really good. Only 2 gm net carb. Not sure where the "sugar" comes from as there is only 1 tsp of coconut flour. I wonder if almond flour would have any impact?

171 calories come from fat so I think using lower fat cheeses would cut the calories considerably.

I am currently recording all kinds of chaffle recipes. When I get the waffle iron, I will be all ready to go!

This is my very first effort at making chaffles with my Dash Mini Waffle Maker. They are about the size of an Eggo and you can reheat them in your toaster.

I think I'll make this again and leave out the chili powder, use a mild cheese and play around with seasonings. It will be a good bread side for meals. This taco flavor was perfect for chili!

This is made using 1 egg white instead of a whole egg. That plus the seasonings makes sure there is no "eggy" taste which I am pretty sensitive to!

Lots of ideas there! Sweet ones, softer cake like ones, etc.

I made scrambled eggs and added some cottage cheese and wanted some cheese but all I had was some cheeze whiz. I know it's not the best, but it's what I had.

Anyway, cooked over low heat. It was a very soft scramble, but it was so delish! Next time I hope I have some cheddar instead,

Keto Jalapeno & Cheddar Cauliflower Muffins
Ingredients
• 2 cups riced, raw cauliflower
• 2 tablespoons minced jalapeno
• 2 large eggs, beaten
• 2 tablespoons melted butter
• 1/3 cup grated parmesan cheese
• 1 cup grated mozzarella cheese
• 1 cup grated cheddar cheese
• 1 tablespoon dried onion flakes
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 1/2 teaspoon garlic powder
• 1/2 teaspoon baking powder
• 1/4 cup coconut flour
________________________________________
Instructions
1. Preheat oven to 375 degrees Fahrenheit.
2. Combine the cauliflower, jalapeno, eggs, and melted butter in a medium bowl.
3. Add the grated cheeses and mix well.
4. Stir in the onion flakes, salt, pepper, garlic powder, baking powder and coconut flour until thoroughly combined.
5. Divide the batter evenly between 12 greased muffin cups.
6. Bake for 30 minutes or until golden brown.
7. Turn off the oven and leave the muffins inside for one hour to firm up.
8. Remove and serve warm or cold.
9. Store leftovers in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months.

I made this today and ate 1/4 of it for my main meal. This recipe is for EIGHT servings. I only made FOUR.

It's tasty!







Chicken Philly cheesesteak casserole

Ingredients

1 tbsp butter
2 lbs chicken thighs or chicken breasts, cubed
4 oz. yellow onions, sliced
6 oz. green bell peppers, sliced
8 oz. mushrooms, sliced
2 garlic cloves, minced
½ tsp salt
½ tsp pepper
2 tsp Italian seasoning, divided
8 oz. cream cheese, softened
½ cup mayonnaise
2 tbsp Worcestershire sauce
8 oz. cheddar cheese, shredded
12 oz. provolone cheese, sliced

Instructions

Preheat the oven to 375°F (190°C).
In a large skillet on medium high heat, brown the chicken in butter.
When the meat is cooked, add onions, pepper, mushrooms, half of the garlic, salt, pepper and half of the Italian seasoning. Continue cooking until vegetables are just tender, but not soft. Remove from heat and set aside.
In a large bowl, mix cream cheese, mayonnaise, the rest of the garlic, the rest of the Italian seasoning, Worcestershire and cheddar cheese. Add the meat mixture and combine.
Spoon into a 9” by 13” glass baking dish and top with the slices of provolone cheese.
Bake in the oven for 25 to 30 minutes or until the casserole is bubbly and slightly browned.

I love fish and chips. I am not a huge fan of salmon other than salmon cakes. I like crab, shrimp, scallops, lobster for shellfish. I like ocean fish.

I grew up on the west coast where fish, especially salmon was plentiful. I always hated shellfish, and barely tolerate other fish (including salmon) unless it's fish and chips from a few select restaurants. which I don't eat often. Just not a fan....

My dad always fished for crappie and bluegill. So good. I love bluegill and catfish too. In other parts of the country they think catfish is disgusting. Fish is my favorite protein.

Healthy Mediterranean Baked Fish
By HWC Magazine 30 Minute Meals, Cardiac Friendly, Diabetic Friendly, Egg Free, Fish and Seafood, Gluten Free, Italian Cuisine, Lactose Free, Low Carb Italian

Succulent white fish poached in a bath of fresh tomato basil sauce, kalamata olives, capers and garnished with lemon slices.

Cook: 30 mins
Yields: 4 Adults or 1 Hungry Teenager

Ingredients
olive oil - 1 tablespoon

garlic - 2-3 cloves chopped

tomatoes canned - 28 ounces crushed

basil - 1/4 cup fresh chopped or 1 teaspoon dried

salt and pepper - to taste ( or Mrs. Dash)

white fish - 4 fillets

olives - 4 ounces kalamata (or your favorite kind of olives)

capers - 1 tablespoon

lemons - 1 sliced thinly

Directions
1Pre-heat oven to 190 degrees C (375 degrees F)

2In a frying pan place your olive oil and fry your garlic until fragrant. Add your crushed tomatoes, basil and salt and pepper (Mrs. Dash) to taste. (If you have a pan you can take from stovetop to oven that would be fantastic, an iron skillet is a little bit too rugged for this dish- so pity for me I had to dirty 2 pans.)

3Place your fresh basil tomato sauce into an oven proof dish/pan. Lie the fish on top of the fresh basil tomato sauce. Place thin sliced lemons on top of fish fillets. Add the drained olives and capers on top of fish and tomatoes. Add a little drizzle of olive oil on top before baking, if you wish.

4Bake your healthy mediterranean fish uncovered for about 15-25 minutes or until fish flakes easily with fork. (Time in oven depends on size and thickness of your fish) Garnish with fresh basil and enjoy!

I have heard that a lot of people take nutritional yeast if they have an iron deficiency, but beyond that, I don't know much about it. I buy flaxseed occasionally and usually put in muffins, but I haven't made or even eaten them for quite some time.... My sister gave me a recipe using almond flour instead of wheat flour, but I've only made them once. They were good, just not into baked goods now....

Thanks! My mom used nutritional yeast but I never was sure what she used it for. I use flax seed too in my Nutrim drink. I may check out the hemp seeds.

Tish I had all 3 on hand so added the yeast is good fiber the flaxseed are good for blood pressure and cancer which I don't have and help seeds are a good source of protein fiber and omega 3

15 Minute Keto Garlic Chicken with Broccoli
and Spinach
Cheesy garlic chicken bites cooked in one pan with broccoli and spinach in under 15 minutes.
This quick tasty dish is a great keto option and can be served with zoodles or pasta!
Ingredients
Instructions
1 pound chicken breasts cut into 1'' pieces
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon crushed pepper optional
salt and pepper to taste
3-4 cloves garlic minced
1/2 cup tomatoes chopped
2 cups broccoli florets
2 cups baby spinach
1/2 cup shredded cheese mozzarella, cheddar, parmesan, or favorite melting cheese
4 oz cream cheese
1. Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add the chopped chicken breasts, season
with Italian seasoning, crushed red pepper, and salt & pepper. Sautee for 4-5 minutes or until chicken is golden and
cooked through.
2. Add the garlic and saute for another minute or until fragrant. Add the tomato, broccoli, spinach, shredded cheese,
and cream cheese. Cook for another 3-4 minutes or until the broccoli is cooked through.
3. Serve with cooked pasta, rice, zucchini noodles or cauliflower rice.

I found this one on pinterest and fixed for dinner tonight. Did not serve it over anything and I did add some nutritional yeast, hemp seed hearts, and flaxseed meal (did not measure) and it was delicious.

Thanks for joining in. I'm fairly picky so I think one of the reasons I like cheese so much and nuts is that they are ready to eat. I cook 3 meals a day almost 7 days a week so I look for new foods I might like. I like most fruits and all nuts. I don't like blue cheeses or real stinky cheeses. Cheddar is one of my favorites too and mozzarella. I love olives so I knew I would love olive oil. I mainly use it.

I have been following your discussion about cheese.

I have to admit that I am not a connoisseur by any means. I like one brand of cheddar which is my fav cheese, followed by Mozza and Parmesan (not the powdered junk you buy from the store shelf, lol I like all three freeze dried for snacks (eat out of the can ready), and for using instead of croutons in salads, etc - gives the salad a crunch factor..... If I'm putting in a dish, I like to use what passes as fresh, lol.

I do not like olive oil. Not even the smell of it. But then, the only oil I use is coconut oil, I won't use any vegetable or canola oil.
