When I eat "lunch" I tend to go for quick and available... leftover protein (roast, eggs, fish, ground meat, chicken), mixed with mayonnaise and chopped onions/celery for a some crunch, on greens... I do better when I eat similar things on a daily basis (easier to meet/control macros); but when lunch is my main meal for the day and I feel like putting in some time, these are some of my favourites (they all travel/re-heat well):


Guacamole & Bacon Rinds



Cheese Stuffed Bacon Wrapped Hot Dogs (I stuff mine with Blue cheese) with Creamed Spinach, or sauerkraut salad (sauerkraut, olive oil, chopped onion, salt and pepper)

I also OFTEN eat breakfast for lunch: some form of eggs (2), bacon (2 slices) and avocado (1 whole)... keeps me full for hours.

Lunch/keto is easiest when you find a small selection of staples that you like, and enjoy eating. I make sure there are always grab and go fixings in the fridge: roast, hard-cooked eggs, low-carb veggies, olives, mayo, leftovers (I never cook for just one meal), canned fish, I make a big pot of keto soup for all week.

Many great ideas!

Not much of a lunch person usually just a snack thing. Today I have cucumbers soaking in ACV and sour cream, dill and scallions with a bit of stevia.

Or tuna with mayo and use cucumbers sliced as a chip and the tuna as a dip.

Both are satisfying and light. Not to heavy to bog you down and drain the brain of energy, trying to digests something heavy.

Walk through your journey with a loving open heart and as well mind. Treat others as you would like to be treated.
Laugh, if at nothing else yourself.

Today I have turkey, roast beef and cheese rollups with broccoli and ranch dressing.

I also like to take a hard boiled egg or two and dice it, mix with 1/2 diced avocado, mayo and some Real or Celtic sea salt and pepper and make egg salad and last week I had it with a pickle spear or you can serve it on a bed of greens.

I'm starting this discussion for JANICEONE1. I'm looking for lunch ideas, for a lunch to take with to work and eat with little preparation time at work.

I'm starting this off with a peanut-butter sandwich. Yes I've done this. I make waffles from protein powder, and use two waffles as the outsides of the sandwich and inside I put butter on each side (lots of butter) and a little peanut-butter in the middle.

Here is the recipe. Careful with the waffle maker, the protein powder burns a little easier than regular wheat based ones:

Estimated grams of carbs in that, 1 gram from the two waffles, 0 from the butter, and 2 grams from a tablespoon of peanut butter (3 if you count the one gram of fibre). So you see, at most 4 grams of carbs in that "sandwich". The butter is critical, as the waffles by themselves are a little dry.
